OT - I also never use the large bolter ammo packs that come with space marines. While they are the proper size for a bolter clip, the heroic proportions of GW miniatures makes them look far too large for the model. That said, I have seen them used to great effect on truescale marines.

Mostly any metal models are a pain, but the most hated model in all of my time bulding them is the Lord of Change.
Weirdly enough it seemed to go together alright at first, then one of the wings fell off, then the other did, basically the whole model collapsed and had to be rebuilt 4 times over the space of a week. I was not inpressed.

I thought the Daemonettes were just annoying because they were SO tiny, and the arms on mine are almost constantly falling off, and a couple of them ended up with big globs of glue where the arm attaches that I had to hide with some creative use of greenstuff. When my friend got Eldar, and I saw how tiny those were I was glad I never wanted to put any of those together.
In general, I just hate metal models. For the most part I won't buy them. I bought some Sisters of Battle when I first wanted to try painting, and they're all falling apart (even though they're just backpack, one piece body and base) :/ And my Daemon Prince falls apart at the drop of a hat, despite using multiple types of super glue and kicker multiple different times.
Also: I never use faces because my army is all female and GW makes female human faces that look like bad drag queens at best, IMO. The only exceptions are a couple of the Daemonette heads, but they aren't quite human.

What in the hell are you using to glue your metal minis that allows bits to just "fall off?" Plastic glue? Wood glue? Emperor forbid, superglue?
I use a two-part epoxy gel. The metal is more likely to break than that stuff. Give that a try.

Things I don't put on my models:
Dark Angels: I'll put my vote down for non-helmeted heads too... I can paint faces pretty well, and have had to paint them on some of the metal models, but it's war, and you should never go to war without your helmet! The movie Starship Troopers had one of the best examples... Live Fire Training + Taking Helmet Off to Kiss it = Headsplosion!
Tyanids: The good majority of biomorph bits. Personally, I don't see them adding enough to the model to justify the fiddly-ness of them, but saying that, they are good for conversions!
Things I hate to build:
Dark Angels: Trying to think of something, but I don't find anything in the SM range all that difficult to assemble...
Tyranids: Old, metal Raveners... Given, when I was putting them together I only had gakky glue and it was late in the night, but it frustrated me to no end! Never again... They're all plastic now though, so... YAY!

Okay, it seems I've just inadvertently painted myself as a dribbling moron, with a constantly disintegrating army of metal miniatures; I can assure you all that any problems gluing most them are trivial at best, but compared to plastic still an irritation, mostly based around the length of time it takes for the glues to dry.
Believe it or not, superglue is the last option I tried and the one that has actually held the thing together. I usually use the gel glue I have, followed up by an infusion of superglue, which I've never had any problem with, even on equivalent scale models like the Bloodthirster (Still in one piece after 5 years and a move of home). It just seems the Lord of change refused to hold together for reasons I can't quite explain.

this is why we do conversions. they make it fun. I spent 14 hours just poseing my assault marines, and thats before I paint them! The worst part is the fact that they're just so easy to work with! and fun! plus, the arms are independant of each other, so it's easy to make normal conversions. and making their feet work to pose is so much fun. Just do some conversions, and it's fun. but thats the reason I don't f**king use guard. I hate putting together the rhino tracks. they're better then airfix, but they're still dificult, all the peices look the same!

3) Flag poles on the back of motorcycles. Eldar jetbikes, marine bikes, the old ork bikes - all had poles for banners. Gah.
4) Agree on the helmet thing - Marines should wear helmets.
5) Tongues on tyranids. That was my wife's army, and her decision, she thought the tongues made them too recognizable - she wanted more alien. So we cut out all the tongues on every model in the army.
This is sounding more like what I remove than what I don't add...
Lemme see;
All orks get one piece of 'bling' from the sprue. That could be an ammo pouch, a grenade, a strip of bullets, or the like. Basic idea is that everyone gets something. But no heads. I don't like the head bit.
I'm not a big fan of smoke launchers or the giant IG searchlights. It's usually hard to find a good place to put the smoke launchers in particular.
Yes to the topnots and helmets. Except Libby's, I dont think they look better with a helmet, no-one can see the lightning in their eyes
And my preds no longer get sponsons unless they're the old hybrid ones.
Personally, I never put the large pouches on marines, the small ones and grenades that fit on the belt, yes, but the big ones look silly to me.

I actually clip them onto the marines firing hand, see, he'd be able to reach it with the steady hand, [the left hand] and he'd easily be able to acess it.
For a nice effect with them, I cut them into three bits, then put them in acessable places on the models.

Fair enough. Truth be told, some metal models are just like that.
And I'm honestly surprised you're able to make superglue work, at least in the long term. It's one of the few glues that will in fact bond to metal, but I normally expect it to fall apart a month later.
I've tried a few methods with metal models... from superglue to epoxy to the US Navy method (holding them together with layer upon layer of paint).
Epoxy's the only one that's ever lasted for me.

More relevant to the topic, I may have said this already, but I hated building the one squad of Sisters I got to practice on for the very reason that they were metal.

I have seen an interesting placement for a grenade on a Berzerker. There was a grenade on its chest that seemed like it was attached to the chain across the chest. It seemed appropriate to me, so I left it there when I bought it used.

I never put 'sprue bling' on. All the extra bits, like grenades, purity seals, etc. I might need those bits for conversions later. I also fanatically save every tiny bit that I don't use.
I hate (hatehatehate) models that can only go together one 'correct' way. I just put together a box of scouts and discovered (much to my dismay) that if the torsos won't attach correctly unless they are pivoted. What's more, if you pivot them to the right, then the arms won't fit on correctly! (At least when armed with shotguns) I very nearly destroyed a few models in a fit of Hulkish rage.
