"Men of Iron" is a silly name for anything except some colloquial term for a robotic servant.
If you don't want the name to be silly, you have the wrong game.

In my opinion i think bright red eyes would look cool. What about using Steel its stronger than iron and isn't used as much in 40K

I should also add that if it were me, and I were making a 'metallic' themed army where the idea is they're watchers--I'd go for something a bit better than iron or steel.
Something like 'The Argent Vigil' would be much better, in my opinion.

Iron naturally sounds better as it seems more advanced than stone so naturally fits the year 40000 better

It sounds pansy.
Also, it is only stronger relative to weight than iron. Iron is still more durable.
