For me, it's a pure economics thing. I make lists, and I put together that list with what models I have, and then I purchase/model/paint that which I don't. Eventually, I get to the point where I make a new list and find that I already have most of the models, so I don't have to make many more, and very eventually, I get to the point where I don't have to make any new models I need to make in order to field the list I want to play.
In this case, "enough" is something that's rather organic.

No, that's what an obsessive-compulsive hoarder would say.
I have a company+ of marines - enough was enough when I realised I'd never be able to field all of it in a single game (and GW jacking the prices just confirmed it).
My eldar just started out being one or two units from each FOC entry. Then became just the models I liked. Now it only gets added to when I see a 2nd hand bargain (last one was a FW nightspinner going for $20, undercoated black).
If the crew of "Hoarders" is knocking on your door, you have passed the point of "enough" and pushed through into "Way, way too much."

I'm OVER 50 (and so far over everyone's BS, too).
Old enough to know better, young enough to not give a ****.

I think it depends on what army you are playing and what styles you have settled on in that army.
With my SW, I like to play a thunderlord with TWC and 10 man GH packs in Rhinos supported by nor more then two Long Fang packs. I also like to play a hybrid Loganwing list. So my army and preferred playing styles will limit me to those choices.

For me it was the last time GW put up their prices, I can no longer justify paying £20 for 5 guys when I can buy a decent old game for that.

And heaven forbid if the Marine would also happen to have an intimidating looking, vertical scar. Then you're surly boned. Those guys are the worst. Not a chance I'd say.

...ha ha ha! enough is never enough! I say stop when you are pleased with your army.
Then you start a second Armored Company
Then you start a third....
