Aside form allying with Tau, do Eldar have anything that could take on a flying list? like 3 helldrakes, 6 night scythes, etc.

3 Drakes can be a tough match-up, but it depends more on the rest of the Chaos list than one the Drakes themselves. By keeping your Serpents on the back board the Drakes themselves won't be able to crack them themselves, so if the Chaos army doesn't manage to crack them by other means your guys can be safe inside for a few turns while the Drakes how no good flaming targets. It does turn into a stalemate very quickly though.

Night Scythes aren't a problem IMO. You said you have 3 Serpents. 3 Serpents with Scatter Lasers should be doing 3.67 S6 hits and 3.67 S7 hits that ignore Jink a turn between them, which should be enough to deal with at least one Night Scythe a turn. And that's just the three Serpents. Scatter Walkers mak a mess of them easily enough too. In general, Eldar put out enough S6/7 shooting to not have to worry about AV10/11 flyers too much. To be honest though, I haven't seen Scythe SPAM used in awhile now.

fair enough on the serpents.

Would you suggest wraithlords, perhaps?

I've not had many games with the new codex and I'm still trying to work in some of my favorite units.

From glancing at them on paper, and from looking at battle reports online, I don't see any point in ever taking Wraithlords. Once tooled up they are around 170pts, which is only 70pts away from a Wraithknight, which is so much better. And in this particular case definitely not; they are not good at AA. Think of it this way, one Walker for 70pts puts out the same amount of fire as a ~160pts Wraithlord.
