well I HAVE personally seen it stated, word for word, that if all the orks were to unite, (in things other than the ork dex) that nothing, united galaxy or not, would stop them.

Yes but this isnt a galaxy wide battle, its all on one planet... So most of the points made dont mean much as its all in one place.

as stated, its assuming this one planet (or at least, thats what it became) can hold the mass of all da orks, nids, IG and w/ ever for a battle. If its just Blank guard regiments vs, Blank Ork Waaaagh, vs blank nid hive fleet. then meh. its anyones win.

Great, so between us we've both personally seen it stated that it would require all the other races to stop either the tyranids or orks. Case closed then... apart from the fact that the vast majority of the tyranids are not even in the galaxy yet...

It says galaxies, as in plural. This is one galaxy, they have the biomass of more than one galaxy. More than one galaxy > one galaxy. And errrr yes it does say nothing short of the galaxy standing against the tyranid threat could stop them. I've been reading up on tyranids quite a lot since I bought their first dex back in '99 (I think), and I know for sure this has been stated. I was hooked on the race ever since I read a story in that dex of a lictor hunting down a guard squad one by one as if from a horror movie. Just because you have not personally seen that stated does not mean it isn't in the fluff.
Well it also says, as raiden stated, that the Orks, if united will roll everyone. Not to mention that there are also orks outside of this galaxy (as imperial probes have confirmed).

There is really one key element. Ork magic depends on the number of orks. If all the orks, currently alive, united, were to all think "We will win," then the sheer number of them could cause fate to shift, and something happen to make them win. Alternatively, the sheer number of them could probably cause all the other armies to simply vanish, if they all agreed "They just aren't there anymore."
Of course, they need someone smart enough to realize this. If all the orks, united, didn't think either of those things, it'd probably fall down to the tyranids eating things, then unleashing fungicides. Or evolving into being more ork-like (Sporogenesis, growth thruought life, etc).
