I could swear I've heard him make comments like that when he shows up at someone's job to help them scrape up offal or garbage.
Most of the episodes where he says something to that effect, it's often quite tongue in cheek, or sarcastic.
I've always taken what he says as a sort of "you're never going to love 100% of your job, but you're gonna be 100% more happy in having A job, than no job" And in this case, I agree that he's not saying "settle" for a job, but rather, go for a job in a field that you're passionate about, even if it may not look like the perfect job. I mean, if I loved carpentry, and wanted to build houses for a living, but the only place hiring was a place that makes wooden boats, I'd probably take the job as it's relatively within my field, and it pays the bills.
