Admech Dragoons. They're great units, although not particularly amazing in any one thing. But what makes them so fun is that they're so good at denying your opponents' options. They are mobile, decently durable, fill a lot of space, and can tie things up in close combat for a very long time. They're cheap units that require very little investment, yet force your opponent to deal with them.
Because of the back-and-forth play that they encourage, they're one of the few units in the game that put you and your opponent in a position to play against each other, rather than your lists. For all the problems that the Admech codex has, Dragoons are one of the best designed units in the game.

Orks: meganobz of course. They don't do much but they're my favorite models and sometimes they manage to kill a vehicle. People like killing big stuff or elites and meganobz always make the opponent happy
Space Wolves: Lukas the trickster. Points sink but funny duellist.
Drukhari: Talos. Bullet magnets, slow and lackluster dudes, at least the index version of them. Like meganobz they help keeping the game very friendly and relaxed
Breachers in a devilfish with Darkstrider. They are fast and people don't usually expect tau to be pushing up and engaging them at close range, darkstrider helps witht this and if the enemy tries to charge them I can fall back. My second favourite unit is any form of shield captain, a true knight in shining armour wo is always out to kick ass and take names.

For my Thousand Sons I'd have to say I love running a defiler. I know its a model that draws mixed reviews but I love it and it functions admirably in my Thousand Sons.
For Eldar its Shining Spears - I've loved the unit since I started the army in late 4th. I know its currently one of the most used units in the book but I just dig Eldar knights.
Storm raven is always a lot of fun. When you run it like it's supposed to be played (as a transport) it can bring all kinds of friends to the party. It was always a lot of fun to bring a combat squad of purifiers and a venerable dread and just drop the hammer right in the middle of the opponents army.

Imperial Guard Veterans. I love taking a few squads of guys who have survived entire campaigns in the front lines of 40k as mere humans. They’ve survived years in a universe where their comrades lives are measured in minutes. They are some of the greatest soldiers in the Imperium and can pack a mean punch on the tabletop for cheap.
That thing is pretty sweet man. What the heck is it armed with? 2 heat rays?

1) Ahriman. Boy feels more like a quarterback than any other unit I've played! There's a lot of skill and decision making to be had with him, and how you kit him out changes the way he plays, so he's forcing meaningful decisions turn zero.
2) DK grenadiers, jumping out of their tiny transport, having scoutmoved up the board, putting the melta hurt on something big and expensive!
Would either be Chaos Chosen or SM Sternguard. I love the idea of super elite dudes with baller weapons just blapping stuff all over. They're not the worst game wise either.
My best memory of my sternguard was the entire squad except the sergeant got whacked first turn by those heretic tau fish-goats. He pushed up, wiped a firewarrior squad in 2 turns then started firing at longstrike taking more wounds off than my lascannons He has now been dubbed Balor Fishbane
In seventh probably my R&H Baneblade. A vehicle which bolsters your troops and generally ended up going thermonuclear taking half the army with it.
Sums R&H up. Good times.
Now R&H are sadly flaming hot garbage courtesy of FW and CA.

Ork Boyz. No matter the edition, no matter the problem, throw enough Orks at something and you'll take it down and laugh at how many Ork Boyz got chopped up in the process.

7th ed Corsairs Balestrike unit, i have never had more fun, having a 5man unit with Shuriken cannons that can move 14" and then jump away after shooting, so fun.
Anrakyr the Traveller. If there's an enemy vehicle within 12" of you at the start of your shooting phase, on a 4+ you can shoot one of the vehicle's weapons at an enemy unit. It's pretty easy to avoid, but my friend forgot about it and kept his Stormfang Gunship within 12" of him the one game. I used the big gun on it to one-shot a Leman Russ. It was glorious.
Rules wise, they ain't that impressive, but I always have fun with my Chaos Lord and Exalted Champion. I try to role play them a little like the G1 Transformers Megatron and Starscream. Where Saturmorn (the Exalted Champion) is always close by and gives the Chaos Lord his buff not no so close the enemy can perform an easy multi-charge. However, the Champion is more than willing to let Galvanius (Chaos Lord) do all the heavy lifting and maybe get killed so he can proclaim himself the new leader of the warband. The funny thing is my Chaos Lord has actually managed to survive a couple harry fights to include battling a Hellbrute, a near full squad of tactical marines and a near full squad of assault marines. I am still waiting for the day the Champion says, "Galvanius was foolish and weak. Now, I Saturmorn, am the new leader. All hail Lord Carvilli!"
I've always loved the Stompa model, it just screams "everything Orkish and funny" in my eyes. Unfortunately I've never played Orks so I've never been able to justify buying one, although I'd like to one day.
In terms of what I own, I very much love my Kastelan Robots. Big bulky 50's style robots are good anyway, but when you put them in double-tap mode, your opponent's face when you pick up 18 S6 Ap-2 shots and then say "this is just one of them" is priceless.
Currently it's my Venerable Contemptor Dreadnought for my Shadow Keepers custodes army.
Highlights include:
- deepstrike in an all Allarus vexilla bearer into an impossibly small gap, then to my opponents horror deepstrike in my Dreadnought within easy charge range of several key units along with a squad of Allarus terminators in a pincer movement of death.
- Killed a Hive Tyrant, 10 genestealers, and 20+ gaunts and two Tyranid warriors. In a single game.
- curbstomping Typhus in 1 round of combat.
- And perhaps my favorite moment of all, making four out of my 5+ armour saves against a Hellblaster squad, and promptly rolling double 6 for the unyielding ancient meaning I tanked 10 overcharged plasma shots and then destroyed the squad in close combat.

Captn Slamguinius. A 129 pt. model able to do 72 pts. of damage is so hilariously over the top. He can pretty much kill everything in the game in one turn.
