For my Beastman IG army I was considering using Skaven as Ratlings to fill up some points. Will the arms/guns be the right size for them or should I just go with Ungor for them or something?

How would I paint slightly pinkish noses onto dark grey skin and make it look realistic?

How would I go about sculpting fur onto Catachan arms so they look like Beastman arms rather than human arms on Gor?

Skaven are about the same size as the current ratlings, so they're probably better as Ungors will raise LoS issues. Try and see if you can use the Skaven's actual arms and just cut the wrists off the Cadian or Catachan sniper arms.

I thought about LoS aswell, I shall see if anyone will let me look at their Skaven at my FLGS and maybe end up buying a box of my own to experiment with

There are a few skaven models that are already holding guns that might make things a bit easier for you there. Warlock engineers and jezzails would probably be your best bet. The engineer from the Island of Blood set can be super cheap (I just got 2 from ebay for $2 each) and are carrying scoped guns, but they're holding them in a pretty darn un-sniperish way.
