I would say a combination of:
Something to do when you're bored
There's always somethign 40K related one can do, read, write army lists, paint, model, or go look for a game
Something to do with your friends
Being a game that you need an opponent it is a social experiance
A hobby
Something you enjoy doing in your spare time
An addiction
PLASTIC CRACK!!!!!!! Seriously, I've spent too much on this in the past year, three carrying cases, two armies, space hulk, White Dwarf subscription, some Black Librairy Novels. Not to mention tournament entry fee's. PS The points listen in my Sig are just assembled models, I have about 5 units I still need to assemble....

Meh, I used to play it when I was younger a lot, though really then it was for the social aspect and to shoot the store manager in the groin with paint balls every other weekend. I somehow found myself getting back into it when I was still dating my ex girlfriend a while back and I think it was because I was looking for something a little different to do every now and then and take me away from the usual malarky. I get flights of fancy and I think that even though the side of the hobby that really drives me, the sculpting etc, is a bit lost on others as well for kind of the same reason I got out of it when I was younger, I'm distancing myself from it now. GW is ever becoming even more profit driven, and gamers seem to be more into kicking about each others toy soldiers on the battlefield, and oneupmanship. If I'm ever able to find somewhere to play it that's more that places a socialising before the game I think the hobby may find itself taking up a little bit larger part of my life, but to me the hobby is just the odd minature that I'll sculpt every now and then. My interest in it'll fade away once more when I move up another wrung on the ladder of life, till then its me sitting here a night or two a week doing my thing, always hoping that I may actually get this army to a game worthy state, filling up my time untill something important show up, or taking me away from the petty things life throws at me.

To me:
40k is a way to enjoy playing with other people, to enjoy (or hate) the randomness of dice, to make and execute interesting tactics, to be a general and above all else, to have fun.

for me it used to be a hobby, but since losing my job it has become a lifeline (not literally) i need my 1 night a week to geek it up at my local FLGS to relax and chill out, i can happily say these little toy soldier's and the community that comes with them have helped get me through a turbulent part of my life. A HUGE thank you to the Dakka community =)

For me it is PART of my hobby.
40k has never been a hobby by itself to me.
Modelmaking and painting and converting and putting the little plastic meatshields on the table while I roll some dice and remove them is my hobby.
It is one of the miniatures games I play.
One of the SF minis games, yet.
I don't play ANY fantasy games.

I'm OVER 50 (and so far over everyone's BS, too).
Old enough to know better, young enough to not give a ****.
That is not dead which can eternal lie ...

First and foremost its a hobby for me but its also something to do to get away from sitting infront of the tv and vegging out, also it's nice to get away from the wife and kids 1 or 2 days a week  . I also love the painting side of it more now than i did as i'm actually getting quite good

Always had a "geek" mindset by loving sci-fi and all things related to that.
Plastic soldiers we control = every kids dream. We get to paint, collect and watch our army grow, often over years, and then we can control them on the battlefield with the added randomness of the dice just makes for a funny and often enjoyable time.
I love painting too and consider myself above average at it. I use painting time to relax and unwind from music (my job and PASSION) and then use games to socialise with people not related to music lol...
Also, my girlfriend is in to GW so that helps!

all of the above options I would say.
When I am bored I paint my army. I only play 40k.
I play games with my friends or new people, that will hopefully become friends
It's my hobby, I enjoy doing it.
I am addicted to gathering as many models as possible. I think of the rules all the time and I read the lore all the the time. Basically, it's pretty much always on my mind.
A craze, because in a few months, i'll tire of it again and will stop for a year or so and then get the itch once more.

It's a hobby. Not THE hobby, like it once was. Now there are plenty of alternatives.
I used to hear great things about GW, but nowadays it's nothing but moaning about GWs releases and prices. smattered with the occasional praise that is again drowned out by all the people who are bitterly displeased with the way GW is running their ship. From the rules, to the releases, to the models. Just look at pretty much anything on these forum sites. lots of displeasure.
Yet as much as they hate it, they still buy it. puzzling. I don't see myself getting back into it anytime soon (i lost 99% of my collection in a fire) but i still keep tabs on what's happening in case GW gets their act together. Even if they do, i doubt fans will stop complaining.

A hobby that I wish I could get more into, however, I only ever seem to be able to work on it when I have a deadline and need to get stuff done for a tournament or similar (and seeing as I have only ever been to 2 tournaments in all the time I have been playing, that leaves a lot of unpainted/partially painted stuff  )

I enjoy 40k for the painting aspect the most, but as I get better at playing, I like the gaming aspect just as much. I suppose that's natural. I simply refused to play with an unpainted army until quite recently.

When i have time at home i'm usually painting or converting, its on and off tbh because i do a fair bit of playing and recording, some nights i'm out gigging other times i'm out walking or bushcrafting.
all depends.
if i could combine all my hobbies i'd basically wander into the woodland, setup my tarp and get a fire going, whittle some paint brush handles, use squirrel fur for the bristles (squirrel being the lunch) paint and convert out in the fresh air then wander back and play an acoustic gig with friends and get signed by a record company.

Addiction, not to playing the game but painting and modeling, even writing an army list is fun most of the time. Playing the game is good dont get me wrong but modeling and building up a monster army is pure ace lol.
