Nice looking list. There is not really that much in the list that I feel should/could be changed. Splitting the Bloodletters into two squads of 8 might be preferable...
Your strategy (targetsaturation) is indeed a perfectly viable strategy for Daemons. My preference qua unitselection is a bit different than yours, so Im going to list a different 2k points Fateweaver list to offer some food for thought:

At 2k points I rate the third Prince highly. Also I value the speed the Hounds and Fiends bring and the added shooting from the Tzeentch Princes. Both the speed and the firepower are important qualities vs. a mechanised list.

Well let's start by you can't have a squad of 16 bloodletters. I'm fairly confident the squad size is 5-15.
I would consider dropping it into 2 squads anyways. They can both still be in the second wave, so this way you can be more spread out if you don't get your first wave.

The best sqauds for icons are plaguebearers, because of how tough they are. I would switch the icon from the crusher squad in the second wave to one of the plaugebearer sqauds in the second wave.

Max size is 20. I like the squad size because it allows me to put a huge number of power weapon attacks on a squad.

Icon swap is a good idea.

I've run a list extremely similar to that, but I find that in my local meta, as far as take all comers is concerned, the Khorne + Nurgle prince combo definitely adds a lot for me. My Thirster and Khorne prince usually cut a hole in parking lot mech armies (there are only 2 or 3 such lists @ my FLGS) and I find that the Bloodthirster is the most reliable AV14 killer we have. @2500 I usually run a full sorceror prince as my third.

I'm thinking of running Skarbrand instead of a Bloodthirster. With Fleet.. he's not that much slower than a Bloodthirster, and that 24" offensive re-rolls is pretty gnarly. I suppose we'll just have to see.

So below is the 2000p Daemons list I have been playing with for a few weeks now with great success. Below that, is it expanded to 2500 points. I'm going to have to buy the Fiends and Screamers, plus another box of Plaguebearers before I can field this, so I'm looking for a little input before I do. Thanks Dakka!

Basically I add another squad of Horrors /w Bolt and the Screamers to take care of the increased armor @2500. 5 more plaguebearers are mixed in for survivability and objective holding, and the Dakka MoT Prince gets wings, to give him better coverage around the board.
