Often I will just randomly be like "You know what, I'm done. I'm just not getting what I used to out of this." So do you you ever get like that with 40K, and if so how do you motivate yourself not to quit?

Do you mean the gaming? the modelling and painting? etc.?
Starting a P&M blog so you can get other peoples input seems to work wonders from what i have seen for the painting/ modeling side of things.
Gaming wise, i cant help you, maybe try another army?

I have two 40k armies and two FB armies. When I lose interest in one for some time I get back to working on another one.

Sometimes, having some time away from the hobby helps. You can burn yourself out at with all the painting, playing, etc.
I sometimes go on a 6 month hiatus just because. I know this hobby is right for me, because I get drawn back in eventually.

This. Having 3 armies (4, I have two very different Marine armies, one that often plays SW instead of Codex) really helps. Keeps it fresh and really makes it play like a whole new game to me.
This year, I decided to start messing around with MotF and 4-6 Dreads in a list (TONS of fun and a completely different experiance)... all for one new HQ and 2 new dreads. So if you have a little $, maybe just try a different approach to your existing army(s).

I think: I've spent too much on this stuff to just pack it in.... but then then I spend more and it sort of self-perpetuates.

Remind myself how much I have invested into the hobby.
If you're feeling burnt out just take a brake for a little while.
Moderation helps prevent burn out. I only play about 1 game a week, sometimes 2, and at times I'll go for 3 weeks not playing at all.

I carnt be bothered to clear my desk(i use it for evrything hw, pc, drawing), so when i'm bord its just sitting there and all i have to do is pick up a paint brush or some gs.
Just sorta fills time. Having a blog does make it easier as you feel you have to keep adding.
also i have a few different armies, witch helps.
But i'm normally doing something else at the same time(chatting normally) so i don't tend to get bored.
Alllllsooo i take a long time over things so i never run out of things to do:L
and i think a lot when i am modeling(thats why i just written all of that!).

If I'm bored with painting one army I'll paint another.
If I'm bored with assembling miniatures, 40K or otherwise, I'll move on to another interest; be that role-playing games or watching a DVD.
But I've only been playing for 15 months and that time has been interspersed with RPGs and Board Games, so I'm nowhere near the point of not wanting to play.

Apologies for talking positively about games I enjoy.
