So, I saw a thread very similar to this in the 40k section, and thought I'd start it here. Basically, just post what unit or model, is the first to pop into your head when someone mentions a fantasy army..
For me..
Ogre Bulls.. Huge sweaty, nasty, fat mountains of muscle who like to gather up and go stompin things.
Bretonnian knights.. I dont play Brets, but a knight on horseback is the first thing that comes to mind when I think of them.

When I think Warhammer Fantasy the first thing I think of is a bald, armored, hammer swinging warrior priest.

Warhammer Fantasy in general would be a Warrior Priest.
Wood Elves would be Glade Guard.
Dark Elves would be Witch Elves.
High Elves to me are Eagles.
Bretts are Knights.
Empire are mad pyromaniac fire wizards that set alight to anything that moves.
Lizardmen are Saurus.
Warriors of Chaos are self-explanitory.
Daemons are Bloodletters.
Beasts of Chaos are Minotaurs.
Tomb Kings are Skeletons.
Vampire Counts are Vampires.
Dwarves are short people with beards, loads of armour and battleaxes.
Skaven are Clanrats.
OnG are Orcs.

Mandorallen turned back toward the insolently sneering baron. 'My Lord,' The great knight said distantly, 'I find thy face apelike and thy form misshapen. Thy beard, moreover, is an offence against decency, resembling more closely the scabrous fur which doth decorate the hinder portion of a mongrel dog than a proper adornment for a human face. Is it possibly that thy mother, seized by some wild lechery, did dally at some time past with a randy goat?' - Mimbrate Knight Protector Mandorallen.

WoC would definitely be Warriors heroes are nice but the warriors are iconic.
Daemons could be the blood thirster but crushers or letter are more iconic.

Wood Elves: Waywatchers
High Elves: Spear Elves in a phalanx
Dark Elves: Witch Elves
Skaven: Clanrats! With attached warpfire throwers.
Warriors of Chaos: Chaos Knights
Daemons of Chaos: Any of the Greater Daemons
Beastmen: Gors.
Orcs: Common Orc boyz.
Goblins: Night Goblins with Fanatics.
Dwarves: Slayers (This was hard as it could have easily been ironbreakers).
Bretonians: Knights of the Realm
Empire: State Troops
Ogres: Ironguts
Lizardmen: Saurus Warriors
Vampire Counts: Skeleton Warriors
Tomb Kings: Chariots.
For the overall game? Hmmmm. I think a Chaos Warrior is a good iconic image.

For Empire, it would have to be the lowly state troopers. For OnG, Goblins.

Well I don't really have iconic units but more like, iconic races.
Those races, for me, would be: Dwarfs, Orcs & Goblins and Empire and maybe Warriors of Chaos.
