I am about to start gluing the canopy together, and the instructions say don't use super glue as it may "fog" the clear plastic. What types of glue should I use for this instead of super glue?

I believe you want to use Elmers. The white glue/pva/whatever it's called wherever. I made the mistake of not thinking about the fogging before I did that part of the valk, now I need to figure out what to do with the windows.

plastic glue or PVA glue,

@Necroshea paint the windows, or armour it up and say it has a hud/cameras

Use any plastic/hobby glue.. Just be careful not to touch the "windows" if you get any glue on your fingers. It should work fine. Good luck!

You also don't need that much glue to keep the canopy on. Just use a couple of small dabs at the corners where any fogging would get covered by the frame anyway.

Please excuse any spelling errors. I use a tablet frequently and software keyboards are a pain!
