Fairly simple, what army do you most enjoy playing against? Not winning against, but playing against. For me it's Orks, because it's fun to watch them die, and when they get up close, it's fun to get steamrolled in close combat

Orks. They allow for very meaty and bloody close combats between my Templars and my friend's Orks. His shokk attack gun never ceases to provide amusing turning points in battles, and our armies generally end up slaughtering each other, which is always fun.

I like to play against an army that thinks that they are superior to Humans in every aspect. That includes Eldar, Necrons, Orks and Tau.

But mostly the Tau, everybody braining on how they have unmatched firepower. And then I use jump packs and teleports

or simply Heavy Weapon squads

Orks, always a good game, and generally ork players are also fun to play against, good sports and not cheesebeards. In my many years of playing I have only happened upon a few unpleasant Ork players.

Other than that I love killing self rightous IoM players with my Orks or Tau, or my IG, nothing like the face on a GK player getting tabled in turn 3 by a "weak codex of Xenos"

But those are not really fun games, those are usually with Orks as above and tyranids, sometimes IG will be a fun match as long as its not yet another cookie cutter internet list, I play fluffy now, the win at all cost bug in me died a decade or so ago.

Orks are the best - win or lose. Never know what to expect....and that goes for both sides.

Most satisfying win is versus Eldar. Smarmy, tricksy little space elves.

I love playing against any marine army with my orks, a sea of green against 30-40ish marines, pure destruction.

CSM or Orks. I play SoB and Crimson Fists so they are more fluff choices.

SoB vs CSM to purge the heretic, and Crimson Fists vs Orks all day any day, to get revenge for Rynn's world!!!

Orks make for a fun game. They are the enemy of everyone -- even eachother. As such, it feels extremely fluffy when playing them.
