Can a monstrous creature be targeted from anywhere on the board as long as your in range, because they are so big that they can always be seen ? We have always done this, but then due to a small dilemma last night we were looking in the BRB and couldn't find anything to back up this rule, we eventually decided that it was a 4th ed rule we brought through, because one of a gaming members played 4th ed and we started 5th. Was this a 4th ed rule ??

No, that's not a current rule, and I doubt it was a 4th edition rule.
It's harder to get cover for a monstrous creature, but what it sounds like you're saying is FAR past that.

Unless the model itself is physically taller than what is blocking sight to it, no, you cannot target it.
5th Edition uses TLoS (True Line of Sight), which is measured from the eyes of the firing model to any targetable part of the enemy model; if you can't see the model, you can't target it unless whatever you're firing/casting does not need line of sight, simple as that.

I thought I remember 4th having a set of height classifications for buildings (aka level 1, 2, or 3) units and monsterous creatures. Maybe that's where it is coming from?

A new development, my brother just mention that him and our friend also played LOTR (I never did), he said it may have been a rule they carried over by accident and we never noticed so we played like that. Was there ever a rule like that in LOTR , sorry if this is off-topic just want to try and find out about this rule

There is no such rule.
Everything in 5th relies on True Line of Sight. Which literally means if the firing model can see it the firing model can shoot it.
As long as the firing model can see its body (Weapons and wings do not count as body) the firing model can fire at it.

It could be that someone picked up the rules for drawing LOS to flyers in Apocalypse, where LOS can be traced to them through intervening objects. That's the only thing I can think of..

4th did have height classifications. Every unit had a height (vehicles and MCs are 3, swarms 1, pretty much everything else 2), and area terrain had a height. You couldn't draw LOS through an intervening unit or piece of area terrain unless the firer or the target was taller than the terrain. Ruins and woods were usually played as L3 and couldn't be seen over.

A monstrous creatures cover saves work similar to a vehicles cover saves. A MC needs to be 50% in cover to receive a cover save, and it must achieve this cover by being obscured.
Most likely standing in area terrain will not grant it, the model has to visually be obscured as thought it were a vehicle.

Is this listed anywhere in 6th edition now? (when this post was made we were all in 5th ed)? I cannot seem to find it anywhere in the book under monstrous creatures.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.
