Obviously enough, if you want to use Asterion Moloc and Ivanus Enkomi, you've no choice other than to use vanilla Space Marines. If you're willing to forego them (and the chapter's nifty and background-defining preferred enemy rule) then obviously the Blood Angels' and Space Wolves' codices both do everything ordinary Marines do, only better or more cheaply.

Given the suggestions implicit in Imperial Armour X, you might even consider waiting a week or two and giving consideration to running a World Eaters list from the forthcoming Chaos Marines book.

Off the top of my head, the Minotaurs' background suggests they should field plenty of terminators and dreadnoughts, so my first thought would be a basis of something like Moloc + deep-striking (or land raider) terminator squads + tactical marines in rhinos + dreadnoughts in support. Assault marines would obviously be a fluffy choice, but they're not really much use for actually assaulting anything, so I wouldn't bother with them. I shall devote a bit more thought to it...

Edit: ninja'd. From your list I'd chop the assault marines (they're just rubbish)), and the predators, and use the points for more terminators and tactical marines. Since they're portrayed as a well-equipped chapter, I'd consider adding a Master of the Forge as a second HQ (though this rules out a librarian), and taking dreadnoughts in the heavy support slots.

Bonus edit: Looking through IA X, the Siege Assault Vanguard list looks very well-suited to the Minotaurs; a mix of tactical squads with mantlets and troop-slot assault squads in rhinos (or even assault rams) without jump packs, plus squadrons of vindicators and/or predators (and the aforementioned terminators in the elite slots) would be fluffy and (just as importantly) fairly effective. Add a MotF and you could fill out the remaining heavy support slots with a pair of siege/ironclad dreadnoughts for close support of your tactical marines. (Alternately, add a librarian, since everybody wants a psychic hood, or a chaplain [Ivanus] for extra assaultyness.

The only downside to this, of course, is that would require investing money and effort buying and painting Forge World stuff, and the world is full of muppets who'll refuse (for no better reason than that they can) to play against you (whilst, of course, seeing nothing wrong in fielding their long fang/purifier/venomspam lists).
