While I'd like to help the Eldar, I know they would never accept me, so I'd probably join the Tau Empire. I'm sure I could find some way to be useful to them without just being used as fodder or something.

The "Greater Good" offers the most benefit for its people. Yes you are little more then a cog in the machine like in the Imperium of Man, but the tau are less likely to throw your life away then the Emperor. On the other hand if I could be a Space Wolf, then Imperium all the way. But as just a normal person gotta go with Tau.
