So, today there was a raffle at GW Belfast, and I not only won the first prize, a beautiful Fantasy board complete with castle, but also second prize, so I get to decide what the store does for a whole day! And I need help deciding on something to do for the day. Preferably something 40k related as I do not play WHFB or Hobbit/WotR.
So, please post suggestions below.

I'm thinking more small skirmish games with dynamic scenarios.
Or better yet, come up with a bunch of scenarios and forces without points balance, but very clear objectives. Winning should be about something else but wiping out the opponent.

you should make it day where they go online to websites like this, and laugh at the people who write crazy GW bashing post about product, finecast and prices being to much. Then they can have a good laugh as they say "but these people still buy our product and play the game.

That's not entirely true.
My own local GW not only runs Specialist Game nights, but is actually starting up a Deathwatch/Only War/Dark Heresy/Rogue Trader group(subject matter pending a "vote" by the people interested).

I don't play any of those games, but if a local GW (if I had one) said hey, we're showing off all of GW's old specialist games, we're giving demos of BFG, Epic, Bloodbowl, (maybe inquisitor), and w/e they wanted to, I'd go down. I know you can buy most of those models via GW direct... I'd probably be down for a human team or something like that.

I like this idea, everyone brings an army and then is randomly assigned one to play. Or have the armies remain at the tables while the players move around, so every game you play a different army (this idea taken from the Imperial Vox Cast  ).
I think the Specialist Games day would also be pretty cool, as would running something like Cities of Death for a day, or a Kill Team/Zone Mortalis event.
Basically, do something different, something that people don't get to do every day and that will be memorable.

Depends on the size of the GW. If you have a battle bunker, its worth playing a multi-table apocalypse game (say 2vs2 a table) and the outcomes of each table affect a larger game. (say, 10 inch pie plates launched) or something nice and big like that.
I've often bemoaned the fact that true apocalypse games with multiple tables aren't held very often.

I was going to suggest a 40k event with Kill Team rules, but the pick your poison sounds like more fun.
