Pretty straightforward question, would a grey knight power armour back with the psychic hood fit a space marine torso front? I'm thinking of using one for a librarian conversion.

Yes it should, I don't see why it would not. Pretty much all power armor front and back pieces line up with one another. I am looking at the GK torso back and I don't see any issues with fitment.

100% does, only mod i've ever had to do is cut the 2 little knobs off inside the front chest.

Trimming the tabs off the front is the only modification to make it fit properly. By the same token, you can use the GK front torso pieces to make Artificer armor.
