And Im talking about likes here. Obviously, as you get older, you wont be able to run as fast, or do fine detail things because your hands went to pooh. Im talking likes and dislikes.
For example, when I was younger, I pretty much only listened to Metal. Metal in any form was all I wanted to play. Period. Now that Im 28....I still listen to metal on occasion, but Im VERY picky with my choosings, now I seem to have a much broader range of music I play, and typically go for more rock or trance type of techno for the bulk of my listening pleasures.
Anyone else?

Mostly, it's enjoyment of new stuff. It all always seems a rehash of older stuff that was, usually, better. Even if it's not necessarily worse, it's still predictable and boring, because it's been done before.
I've stopped watching TV, because it's all crap. Most new music is also crap, and the 1% that isn't is either barely tolerable, or gets played to death within weeks.
...
Oh wait, that's nothing to do with age, I've just got cynicism.

I used to love playing and watching football. During the season, my entire weekend (especially when I lived on the west coast) would be eaten up by watching football... Now, due to playing rugby, I can barely stand to watch a quarter of a game.
There are some book series' that I really enjoyed, but now I cringe if I even think of reading them.
Also used to be that I only wore T-shirts and Jeans or shorts, but now I find that I am looking at more dressed up clothes from there, and rather enjoy getting all "gussied up" with slacks and dress shirts, etc.

Older guy at 43 old new:
Music: Old:Metal (Iron Maiden, Judas Priest) New: Dubstep (ish) Haduken, Skrillex but also into Industrial/Goth/Steampunk
Added note: VERY picky of ensuring higher sample rate and keeping dynamic range and not letting "autoleveling" turn it into mush.
Clothing: Old: jeans shirt = black, New: Dress pants sometimes suit = black.
General appreciation/reward new ideas in anything. Nostalgia is nice but I am on this round planet for the new and trying to create with the least borrowing possible. This is why Dakka can be fun.

Comic books is the big thing for me. It seems like the ones written now don't have the wonder and cool of the ones I had when I was a kid.
Back then, even though the heroes had difficulties, they managed to win through without the crap of their wives being raped, or kids murdered.
There's enough of that in the real world, I don't need to plunk down money to read about it in.
A good example is the Bizzaro story line in Superman. In the 60's, the Bizzaros were fun to read about in that they created their own backwards world which spawned a special, giant sized edition or two. Now, the storyline is grim, with nothing but disaster and death.
The Inferior 5 and Angel and the Ape were written in no way to be taken seriously, yet nowadays, DC is including the characters in story lines where yet another hero dies.
Comics are definitely not fun for me to read anymore.

Video Games... I rarely find anything that'll keep me invested in...
Lately it's been the kind of games that I can hop in/out in short order... like Call Of Duty and Diablo 3.
The last one that I spent significant times was probably Demon Souls... and before that, Final Fantasy 7.

I was just discussing this with someone at work yesterday: as a teen, I promised myself is always listen to punk and pop punk-green day, bad religion, rancid, blink 182, alkaline trio, offspring...now at 27 I find myself preferring the eagles, the police, black sabbath, blue oyster cult...what happened to me, Dakka?! *sob*
And dammit, I'm keeping my spicy food, no matter how old I get. I don't care that I may need to buy a new toilet the next morning.

Anyone else? Classical, western, hip hop, modern rock, weird sketchy music my daughter plays from Youtube. I'm watching a whole generation come up that barely knows what a radio is. Everything is off da intranetz. I'm finding I'm getting cds for songs when I was a kid, but still listen to the new stuff. Cars. Cars are nice but they're just cars now. Fast, slow, expensive, whatever, just cars. Same for electronics. Clothing. Although I have suits and sport coats I'm now most comfortable in Hawaiian shirts and shorts. I've started up a beard again. Soon I'll be saying groovy man like the other hippies in Austin. My great weekly joy isn't food, money, fame, kids, friends, or the wife. Its just a walk. Every sunday now I take Tbone on our own private walk around the block. We go at his speed, stop when he wants, and usually take about 45 minutes. I drink coffee and we just shuffle along. People slow down watching as they pass. I thank God for each one, because they won't last.

Some of the things that have changed in my lifetime have been noted...
Outifts: When I was younger, I would wear t-shirts and jeans almost exclusively, and loathe dressing up. Granted I went to a Catholic grade school from k-8th grade, and a Catholic high school for 9th grade, so I loathed the shirt and tie routine. Oddly enough, I greatly enjoyed any time that I could really dress up beyond the normal catholic school uniform, like a sports coat, nice slacks, etc...
I still wear jeans pretty much every day, but I have roughly 8 shirt and tie combos, with black pants (since they tend to go well with anything), and 1 nice sports coat with accompanying pants. My job affords me the comfort of wearing jeans every day unless we have clients in the building, then it's business wear. About 2 years ago, I switched up the type of socks that I wear. For the longest time it was white socks, and then I got tired of them getting gross and disgusting from wear and tear, and walking around my house and dorm building while wearing them. I've switched to black ankle socks, which match the pairs of shoes I have, and lead seemlessly into the black dress pants.
Music: Pretty much stayed the same since I got my first Metallica CD 13 years ago. It's mostly rock, metal and techno, though other genres sneak in. I have also added pop music to my listening pleasure so I have something inane to listen to when I want noise but don't want to concentrate on the lyrics.
Food: Still eat spicy foods, and probably always will. I've cut red meat and gluten out of my diet in an effort to give moral support to my dad who is trying to make himself free of his insulin dependency. I still love me some red meat though, so I will occasionally have some, but's probably once or twice a month instead of 3 times or more times a week.
Video Games: Used to hate FPS and sports games, now those are what occupy my 360's disk tray, though my game tastes have been pretty much the same.

Music wise, I used to listen to mostly classic rock as a kid, then moved on to punk rock, then new wave. Now I find myself listening primarily to electronic based music, ambient, folk, and some jazz. Rock isn't very high on my radar anymore (there are some rock musicians who I can't ever get enough of, but for the most part, the standard rock setup bores me at best, and aggravates me at worst).
Dress wise, I went from wearing baggy pants and plain Tshirts a few years ago to wearing fitted dress shirts and slim-fit jeans. I like to style my hair now, where as I used to just keep it plain and messy. I still hate ties.
As a person, I feel I've mellowed out a little. I used to have a reputation for being quite eccentric. I still do, although I like to think of myself as being more sensible and reserved. At least more intelligent about it.

Im the same way with video games now as well. I used to play what ever, pretty much for as long as it took to finish it. Now though....most games just annoy me to no end. The wife bought Borderlands for us to play, Ive started over twice and havnt played more then 30 minutes in because there are a couple small things that just bug the gak out of me. Do people these days even KNOW what a good game is? Im sorry, but cool art style cannot carry a game.
Glad to see Im not the only one that has had some type of drastic change over the years. Or should I be sad about that?

I wouldn't be. I imagine that there are things you've taken up that are actually more worth while. Kind of like the whole when I was a child, I thought as a child, but now that I am a man, I think as a man thing.

Nothing of value. I really feel no nostalgia for any of my life between say age 11 and age 23 or so. I spent middle school through about half of college pretty much just hating everything, being socially withdrawn and delaying my education with bad grades. Heck I wouldn't even let myself enjoy music. Back in high school I "Hated music" because "stupid people like it".
I suppose I've gotten the good sense to stop exclusively wearing Windpants. Which would have been bad choice at any time, but were probably already some 15 years out of date by the time I was in high school in the early 00s. It'll take some serious threats of bodily injury to get me back in a pair of those.
All-in-All I've only picked up new interests and hobbies as I've aged into adulthood. Heck I even listen to the dreaded "Music" now, even if my taste isn't particularly distinguished. I'm perfectly content with whatever happens to come on the radio.
I'm fortunate enough to have a decent job with stable hours that doesn't send me home with work at the end of the day. Also, I've managed to avoid spawning any carpet demons, so my free time is more/less still intact these days. Really only my commute bites into in ways I hadn't already been used to by the time I left college. So, I haven't really had to cut any hobbies just on account of being assailed with responsibilities from all sides. I do have less time for Video Games if only because I'm really into Wargaming and going to the gym at this moment. However I'll still blow a weekend, or even some vacation time on a good release. That's part of what made me so mad at the ending to Mass Effect 3. I took 2 vacation days to marathon that thing!

That right there is a key to life.
I think the thread title is somewhat misleading. The aging process takes things away very slowly overall. Life developments tend to take stuff away (and sometimes quickly), but they also give you other things. My free time is limited now, but I have a great family in return.

If you have a PS3... check out Metal Gear Solid 4.  Seriously... one of the first game to come out with the PS3 and imo still one of the best.

As a sullen youth, I can remember dreading going to the supermarket with my dad, because he'd sing eagles or dire straits songs as he walked around the store.
The other day I wandered about the supermarket and an old lady said 'oh, nice to hear someone's happy' as I'd been singing prodigy songs aloud whilst choosing potatoes in the veg section.
I was at first a bit mortified to realize I had become my dad, then countered with the fact I am now too old to give much of a shiz.

Mostly dress. I used to just go with t shirt and shorts, but I've come to really enjoy wearing a shirt and tie on a somewhat regular basis, and I've developed a fair collection of ties and tie bars to go with them. I also bought my first suit recently, and I really like it.
