I'm looking to build a custom Khan but since GW is too blind to understand the need to put out a model that could be easily modded to be on a bike, I'm having major difficulties. Simply enough I'm looking for the proper parts to make this guy the badass centerpiece of my army that he should be. Armour shouldn't be too difficult but a good helmet, weapon and bike is more difficult then I would like. Any suggestions?

Without going difficult or converting, have you looked at the Space Marine White Scars Commander model from GW? Looks the part to me.

Of course, if you want something even more bad arse, then you'll definitely have to do some converting but it's a great base to start from!
Perhaps that + the official Kor'sarro Khan model combined would work well if you're careful with the modification and kitbashing.

I'm going to do mine very simply. I'm going to take a Standard SM bike, and replace his helmet with a SW one that has a sort of Topknot made from a wolf tail and has some sort of rune on the forehead, and give him a Grey Knight Sword. If you want more ornate things, as fancy chestpieces or shoulder guards, or buy a single one of the FW outrider Bikes, or even try a scout bike. The sword you could swap from the one from the VV kit.
