1000pts list...
Beginners night...
My opponent fields
Dark Eldar
-Wracks with a haemonculus
-some bizarre character with 11 attacks in assault...
Allied with...
Harlequins
-About 8 or so of those with a harlequin psycher in the back...
Allied again with...
-6 swooping hawks with some kind of anti armour canons
And oh yes a wraithknight!
In a 1000pt beginners game...
I played Marines in rhinos and a squad of assault Marines in a L/R for delivery...
Needless to say I got rolled over.
Well the only thing scary there is the wraithknight, so its not "an automatic loss" essentially. Also, don't allow unbound then, solves a lot of problems.

I would say the Eldar list is cheese, but only because he brought a gargantuan creature to a 1000 point game.
Beginner or not, there's just not enough stuff at 1000 points to reliably handle Gargantuan creatures without list tailoring.

Hell, I'm not that bothered by the Stormraven. Why? Because, as it stands right now, it's "limited use".When it's shoehorned in to the Codex: Space Marines, then yeah. I'll be irked.

Doubt it's unbound, that's probably a DE formation, Harlequin formation, and 2 Wraithknight formations

If the only Craftworld Eldar models are those listed, then it's definitely unbound. Unless you're kidding and I don't realize, then my bad
There's just nothing that allows 6 swooping hawks and 1 WK, formation-wise, unless there's stuff not listed (but in my head I feel like that list should be close to 1000). DE and Harlequins might be formations.

I don't think any DE char can get 11 attacks. Lillith has +1 from 2CC weps, base of 5, and rampage, but that's it for her. Drazhar could theoretically get 12 if he rolled all 6s on the to wounds, charges, and had a bonus of +12 attack from 2 weapons.

They probably won't do this at a GW store, but what I'd impose for rules for newbie night would be CAD-only, 40% Troops, and no duplicate units outside of Troops. That'd head off a lot of cheese right out of the gate.
One thing I've observed about Tau lately is they have trouble dealing with heavy armor at long range. If you have a Land Raider, you can use that at the head of a column of Rhinos. Plus, being able to assault out of it is golden. Against Tau, you don't need a super expensive assault unit either. Pistol-ccw Scouts work well, maybe with a power fist for the sergeant to double out suits. If you take a Crusader or Redeemer, you could do a full 10-man squad with an attached IC or two and combat squad to hit 2 targets at once.

No DE formation exists like that, unless possibly in the suppliment, harely formation also doesn't exist, nor does the wraithknight formation unless he takes an entire battlehost and uses that one, which he can't use it by itself. Or takes the one that requires spirit seers and guard.

Well, Leilith has 5, +1 for 2CC, Rampage for potentially 3, can get rage from PFP for +2 on the charge, so that can equal 11 if its a late game charge into a large squad.

In general I'll play anyone once, but if someone is playing with a real cheesedick list ask them to play a game where you swap armies. If he refuses, then you can decide whether or not you want to play with them again. Not all people who take cheese lists are cheesemongers, often new players will be told what to take on forums such as these and sadly can get some very cruel advice
I remember when I came back into 40k during 6th after taking a break in 4th and I was asking for list advice about my Chaos Marines to play against my friends in a casual setting, I was told to take two Heldrakes at 1250 pts. My friends still complain about it to this day.
The thing is if you're playing with a non-competitive headspace you're not gonna have fun playing with someone who's in it to win it. They're gonna have fun because they love winning and your list is gonna be a walk in the park for them. You have no obligation to put their enjoyment before your own.
