Basically I typed in on google what I wanted to know but couldn't find anywhere just answering the one question I actually have. So I was hoping someone here would help me out.
I need to know what I need to start and begin playing Infinity like a solid list of what I need like how many dice, what type, what to measure with any templates? ect

You should have plenty with 5 D20.
The templates are in the files to print out, and some manufacturers make plastic ones

Standard inch based measure tape.
5-6 D20's.
Templates - either buy some official acrylic templates or print off the free templates.
Tokens - same, either print off the token sheets or buy some acrylics. When starting, I'd go with print outs so you get a feel for what you use most.
Silhouettes - same, either print off the silhouette sheet or buy acrylics.

That's it, outside of terrain and miniatures. You don't even need a classified objective deck, since you can roll on tables in the book.

1) Download the rulebook.

2) A token of some kind to represent each order that each model gives to your list, weather that be an Irregular, normal, and/or impetuous as the case may be. Number of tokens is heavily dependent on your faction, but most could get away with 10 regular orders plus any impetuous/irregular as needed. Plus a Lt order token. Wounded tokens and Camo tokens as needed by your models.

3) 5 D20s. Shouldn't need any more than this, to my knowledge none of the Burst 5 guns in this game can gain additional burst.

4) A measuring tape.

5) Print out the Silhouette markers and templates and place them on cardstock, cereal boxes also work well as they're about the perfect thickness.

6) A 25mm base something to represent your HVT, model of choice for this.

I've always found order tokens to be a luxury rather than a must-have. I've started using them recently, but I managed for a decade without 'em. Really, the markers to represent hidden models (camo, TO camo, impersonation, etc) are the really vital ones.

The round template is 12cm, the same as a CD, so you can just use that if you want.

Why would you need more than one Lieutnant token?
If you play sectorials a link leader marker token will be necessary too, but it'll depend which sectorial you want to play so you might need more than one (Steel Phalanx, Tohaa) or an additional Fireteam:Haris L1 marker (USARF, QK) .

Running demo games?

Yes I just used little tokens for years for orders, although it is a bit handy having the option for irregular/regular etc.

I'm torn concerning which actual tokens to use. I did like the idea of the MAS mini-tokens, although they are just so small and fiddly, and in some ways their larger ones (which are lovely) seem to fit the aesthetic of the game quite well in that they're more visually prominent.

That's a thing I didn't consider... but I doubt the OP wants to host demo games
I'm in two minds with the small MAS markers on one hand they're handy becaus the don't obstruct much space around the base (imagine here Pi-Well with Assisted fire, Burnt ODD, Isolated and immobilized) on the other hand they are difficult to identify from one side of the table to another especially on varicoloured game mats.
