I've ordered several earth shaker cannons without any sort of mounting device. I need to figure out a way to mount them. Does anyone know a good way to do that? I would like if they could rotate at least 180 degrees. Does anyone know or have any suggestions on a good way to do this?

So you are looking to make 'legs' to mount them on (fix position)? Or are you planing to mount them to a chimera chassis?
If a fixed position some plastic card square tubing glued together into a X shape with a rod sticking up in the center. Add some rivets and detail to the card legs, to give it a little believing power and you should be good.
For a better answer, pictures (if possible) of what you have, and maybe a drawing of what you want would be helpful in helping you.

You could also look into some legs from the Mechanicus Dunestalker thing, to make a cool "spider-leg" artillery piece.

These are the cannons themselves and i'm looking to use the immobile version although id like at least 180 degrees of rotation. I plan to do most of it from scratch, Im using a themed army of wwII style trenches. Any tips on playing/ building such an army?

So you have the tubes. I guess that I'd look up pictures of FLAK 88 on the internets and use those as a base for some plastic card scratch building.
As for the trench fighting, whats the budget? Forgeworld has the Death Korps. Or they also have the Cadian hostile conditions rebeathers.
Does it have to be all GW or are you willing to look to other companies? Warlord has so trenchcoated torsos. Victoria miniatures would also be a good place to start.

Don't forget Mad Robot, their Shock Troop models are a spitting image of the Steel Legion, just without the pipes on their gas masks.
If you want a little more variety, Anvil also has some nice arms they've been working on, and other interesting pieces to consider. He's spinning up a new heavy weapons section as well that you might find of interest.
