The rules for artillery require another model in the unit to fire the weapon, and if the artillery is the only model in the unit it is destroyed. How does that work in Kill Team? How does firing artillery work when ever model is it's own unit?? I'm assuming there's something that I missed to prevent Kannons from instagibbing themselves when they deploy.

I thought Kill Teams were Elite/Troops/Fast Attack.
Aren't all Artillery units Heavy Support?
Assuming they can be used, there are no crew and the gun is removed at the start of the game.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

So something like the Eldar Guardian squad could add a Heavy Weapon Platform....I don't play eldar, but i assume they have to have another model fire the platform

What happens to an Artillery model when there are no other models in its unit? Because that's what's going to happen during deployment during a Kill Team game. Each model becomes a lone unit.

Not artillery but similar enough. To answer the question strict RAW, it would immediately be removed from play.
However, there is already a discussion over in General on upgrades/rules that don't work in Kill Teams.

Thanks for pointing out the existing thread.
As for running artillery in Killteam, I thought that DKoK could get them into a slot other than heavy, but I might be wrong.
Edit: they can get artillery in elites.

There are a lot of fw guard like armies that can take artillery in the elite slot. But they are totally useless in kill team due no one being able to fire the gun since they aren't in the same unit. They don't get the t7 vs shooting rule sice they are not in a unit with the gun and the gun is removed due to having no crew.

We often rule that the Artillery it's an independent piece of gear carried and maned by a single model since the beginning of the match.
in some matches killing the model neutralizes the arty/guardian platform and in others the gun remain stationary until some other model (friendly or unfriendly) comes closer and choose to mane it (all boils down on how fast or realistic we wish the match to be )

Kill team doesn't allow 3 wound models resulting in the exclusion of most artillery pieces

RAW the Guardian platform is deployed, can move around as an infantry model, and can't actually do anything. It can't fire by itself and it has no models in its unit when deployed, so it doesn't get removed (the effect triggers on models in its unit being removed, it isn't a passive check whether there are models there).

As already noted, the platform would be immediately removed from play per its rules:
If there are no Guardians left in the unit, remove the heavy weapons platform as a casualty.
