With the Burning of Prospero coming out soon, I was wondering if any of the Chapters (or even Legions) used or had any Iron Armour. (I'm thinking of getting it for some Salamander descendants!)

Yes, in very small quantities. It's usually saved for veterans/commanders. There was a 3rd company captain from an old Apoc "Chapter Command" set that had Iron armor.
Some chapters might have more than others but would be hesitant to use it. But as I always says, it's your 40K. No reason you can't come up with a good fluff reason for your chapter or another having more than the norm.

Iron Armor is Mk III, not Mk II. Just saying.
That said, there are definitely still marines who wear Mk III and it is passed down from one generation to the next. Whether it is still produced anywhere is another story.

They will still be finding small amounts of Mk II armor all the time. The great crusade was well great. A million space marines in thousands of ships traveling all over the then unknown galaxy. They would need to be resupplied constantly. In the then hostile galaxy that was not fully explored, supply ships would be lost here and there. Hell whole strike forces might get killed here or there in the turbulent times and their fallen bodies might get entombed somewhere. If those caches of weapons/bodies were not found in in the wrap up of the great crusade or in the great scouring, they might still exist to be discovered today.
The admech is constantly searching the galaxy for remnants of the DAoT but they are also on the look out for remnants of the great crusade.

Space Mutts fluff says they keep it for ceremonial purposes, it doesn't say how much they actually have on hand but I'd guess at more than one complete set.
Salamanders have all the fluff they need to have as many mkiii sets as you want to use being that they spend just about all their free time tinkering with arms and armour in both function and appearance.
Somebody tries to say mkiii armour doesn't exist anymore just tell them those units of Salamanders just modded their mkvi to look like mkiii, just about all Salamander fluff will back you up.

There are several examples of Marines wearing mark 3 armour in the Badab War books from Forge World (including a couple of Astal Claws oddities - one with mark 6 greaves and mark 8 shoulder pads, and another with mark 5/6 shoulder pads. Both appear to have mark 5 helmets and modern mark 6/7 backpacks). The Fire Warriors have three depicted, and the Marines Errant, Lamenters, Salamanders and Executioners all have Marines with at least part of their armour being mark 3. Those are mostly in standard squads, not veteran squads or honour guard.

First, Second, and Third foundings would have plenty for a few reasons:
1) LOTS of legions had TONS of MK III. It was really hard to permanently damage, super durrable, and shipped out en masse.
2) Not all legions fully adopted MK IV. Death Guard, Iron Warriors, Salamanders, Imperial Fists, and Iron Hands all used a metric ton of the stuff
3) With how venerated relics are, it's not hard to believe that a chapter has 30+ suits of MK II, III, and V (MK IV was super hard to maintain). That being said, FW's pet chapter is like, 80% MK IV armour, so who knows

Second guessing myself since no one already pointed this out, but isn't Mk III still the pattern for the Iron Warriors in 40k? That's an entire legion that still uses it.

Not really no. They favour helmets with similar aesthetic styling to MkII & III. But not actually MkII or III. Likewise they have their own reinforced torso armour, but if you look at it closely it's clearly not actual MkIII. If look at the *legs* on the Warsmith model and pretty much any 40k era Iron Warrior art and it's cleary MkIV+
