So for my models I use a GW S Layer brush which was recommended to me by the staff, but I have been through 2 of the damn things and haven't even finished my DV chaos set yet! I always make sure I was off the paint from my brushes so I have no idea why this is happening! Someone please help me before I kill myself in frustration!

A small layer is too small for most things. The smaller the brush the faster you'll have paint drying on it. You basically need to be constantly washing a brush that small.
Try using the largest brush you can - if it's got a fine point it'll still be able to do almost everything and you won't have that problem. You'll find a large layer brush really useful.

Loosing bristles?
Don’t rinse them in hot water (can harm the glue holding them together)
Don’t let paint get up in the ferrule (metal bit)
Use brush soap/conditioner
Don’t “smash” your brush when cleaning it, just gentle swishing.

1, don't dip brush entirely into paint so you won't compromise the ferrule (spelling?)
2, if you do get paint in the ferrule rinse it off right away
3, don't use hot water to compromise the glue in ferrule
4, don't rest your wet brushes hair up, this will also comprise the glue
5, during regular painting periodically rinse brush so you never get dry paint stuck to it

And get some better quality brushes. GW brush aren't that good quality and are expensive as hell to boot. Kolinsky brush are much more durable. If you want to pay much for brush might just as well get good one for that price. Otherwise if you want low quality brush like GW get at least cheaper brand since you need to replace them at faster rate.

Back when I painted regularly, that was the bane of my existence. Seemed like once I'd gotten a paint nicely thinned, any brush dabbed in it would have paint suck right up to the ferrule due to capillary action.
Rinse. Dab. Repeat.
