Hey everyone, I'm about to start painting my dark angel intercessors. My question was if the helmet color scheme changes colors like with the ultramarines sergeants or lieutenants?

It's up to what you think is cool, but usually if there is something different about the helmet, it will be a hood or wings on the captain's helmet. The skull on a sgt's helmet will be in gunmetal for a sergeant, and bone color for a lieutenant. I don't think they canonically use codex helmet colors.

Traditionally, Dark Angels don't use helmet colours to denote characters, no. Masters have the company heraldry (shown on the kneepad of regular DA marines) on their right shoulder pad.

Officially they don't paint them different colors. That being said, if you think it would be cool go for it. A bone color like the Deathwing have would probably be appropriate, so would red to match the bolters.

As others already said, in canon sergeants don't have different color helmets (like how Ultramarines have red helmets), and neither do Lieutenants. But, it's your army, so if you think it would be cool then go for it! It could be a good way to make sure you and your opponent can easily tell who's the squad leader. Make sure to post pics regardless, as it's always cool to see people's takes on Dark Angels (my favorite army!).

There is at least one image of a DA assault squad where the sergeant has a red helmet. (Although for the life of me I can't find it now.) But I'd chalk that up to being an anomaly.
And while i'm pretty sure it's not present in any codex, there are a few instances in some of the FW books of DA sergeants having a stripe on their helmet to denote command rank. Which I think suits the subtler DA aesthetic better anyway.
This is also what I do for my minis. I use a bone stripe for battle companies and Ravenwing and a green stripe for Deathwing.

Generally, the DA are a non-Codex following chapter so no different helmet colours. Characters (hi-ranking not sergeants) & termies have been inducted into the Deathwing part of the chapter organisation. The original Deathwing were a squad of DA that came across a genestealer cult & thought that they would all die so covered their armour in ash from the fire. The ash was white. This was inspired by native American Indians I think. GW did this a lot in the early days. This turned in to a bone colour over time & this is how they are painted by GW today.
Bikers are all part of the Ravenwing and are painted black. The original DA were all black but there was a breakdown in communication with the artist that did the box-art for 'Space Marine' (an expansion for the original Adeptus Titanicus) and they were shown in dark green armour. From then on, the DA troops are shown in dark green armour. This is why the HH era DA are shown as black.
Another interesting thing of note is that all the named characters are named after daemons from the Bible.
However, the 'rule of cool' should always be considered - ie what you think looks good is the best way.

Just looked back as far back as 2nd ed and this confirms my suspicion - not only do Dark Angels not typically have coloured Sergeant helmets, their Sergeants don't actually have any markings to distinguish them from their squad.
I suspect this is probably why all of the studio's example squads have a bare-headed Sergeant.
Bone would work, if I saw that on the table I would assume that said Sergeant was a Veteran Sergeant on account of being a Deathwing member, but functionally there's no difference on the tabletop these days anyway. However that also raises the question of whether your Dark Angels would accept Primaris into the Deathwing yet, which is again your choice.
