Since my Briskets are sort of a tradition around here whether you like them or not

I'm no potato man, but I like these. The texture looks as if they're as fresh as they can be. And the brisket is as tasty looking as ever...good to see your stomach is finally again providing us with such delicacies

Heh..Thanks Vik! And Happy New Year to you and your family too! I never understood why people peeled potatoes....All the vitamins and flavor is in the skins IMHO.
Don't knock Nerdy's..."urges" until you touch it with a fork and it just falls apart. I cook it with a rack in the pan, fat-side up, with 2 bottles of Hard Cider in the bottom. Ladygeek then takes what is left of the cider and the fat drippings and makes a killer gravy...Seriously, this sauce should win awards.

to make a good gravy is an art in itself!...in big professional kitchens all around the world there are special cooks just for that job...
and indeed... the skins of any veggies and fruits is something that should never be wasted... it is something nowadays that peeps skin cucumbers...  they could as well drink from the tab ...would be quicker and would amount to the same
