My philosophy is that everything apart from that one termagant hiding in some terrain and capturing an objective/holding the relic is expendable. If they have half an army and no scoring units and I have 1 termagant and an objective I still win (unless they have all 3 secondaries and I have none).

Right.
A lot of players have a tendency to try to preserve his units. Oh, he's my Warlord, I better save him. Oh, devastators need to be protected, etc. Forget that. The really experienced players (the good players) generally will sacrifice any and all non-scoring units in order to try to keep their troops/scorers alive. He's going to assault my troops on my objective. Better move my devastators in front of them to screen them out. I may lose my devastators, but at least my troops will still be alive on the objective. THAT is how you should play your army. (Note that there are always exceptions. Use your judgement on when to hold back and when to sacrifice your units.)

The Tau are very strong in this edition. IMO, the 3 top armies currently are Tau, Eldar (or a combination of the 2) and Necrons.
My gaming philosophy is that, in any objectives-based scenarios, any unit that is not a scoring unit is an expendable unit. Don't be afraid to sacrifice it, even if it is your deathstar, power unit or Warlord. That's how I play my games. I'd gladly sacrifice my 400-pt power unit just to kill a 50-pt troop if that would win me the game. That philosophy applies to all my armies and I believe it can apply to all the armies in the game as well. However, you're going to have to use your judgement on when to do it. Do it if it makes sense. Just be prepared to lose it for the "Greater Good" of the army (whether it be Tau or any army you are running).
Recent results would disagree with you.
7 of the top 10 armies were eldar at feast. 1 was tau, 1 daemons, 1 necrons.

5. Necrons
6. Eldar
7./8. chaos daemons/Eldau (drops)
9. Eldar
10. Eldau
Eldar also won the nova invitational. The top 5 armies are: Eldau Taudar farsight/tau Eldar tau

Sorry for the confusion, but my Top3 list is in no particular order. I won't make any such contention without doing my research first.

Excellent report.
I feel had the tau player had a cadre fireblade instead of the second ethereal, he would have done better though.
