So, rulebook says that model's tail and wings are not targetable.

where does the tail endds and body begins?
Is crone's "undertail thingi" considered tail or body or what?

The tail obviously ends when it meets up with the carapace on the body.
If in doubt though, just realize anything sticking out past the base is probably somthing you should ignore for LOS.

The beginning of the tail is at the base of the spine, so the tail would begin at the point where the 2 lowest limbs are.
Also ignored are the wings, weapons, spikes and spore chimneys.

The answer may lie in a 4+ roll off with your opponent as many people will have different opinions as to what is "right".
As in, which part does the tail start. Because there are all the scaled bits at the beginning part of it.

Nope, that's where tails start, right at the bottom of the spine where the hind legs join to the pelvis.

Wings are simply arms that have been modified to allow flight.
Also, the guns aren't viable targets either, StarHunter25, and your outline has a bit of the tail in it.
