So im building my ig. Sepulchral Knights. I came up with the basics
1: Sepulchral is a world of affluence, making the guard very bright and well equipped
2: All Guardsmen wear Feathered helmets or caps. Conscripts do not.
3: Vets are called paladins, they wear knightly armor.
4:They abhor mess, their armor and tanks are kept in pristine condition
5: They prefer spearhead assaults of massed me, backed up by tanks
I need help with some kind of things, Like Mascot for the regiment? Im thinking Gryphon, but because they are "Knights" I think a horse might also be the best. I have a tiny gryphon model, but i think a Company Standard bearer riding a pony might be funny too.
Why kind of world would Spulchral be would be another one.

You could make them all Charge of the Light Brigadey and have them use good ole 'run at them till someone dies' tactics to flesh out not only the knightly feel, but also the fact that they're in a grimdark world?
I'd go for a gryphon mascot, you can pillage numerous empire kits for iconography (also could provide a very steampunkish direction)

Why did you go with "Sepulchral"? It relates to tombs and burials. I think your idea of bright shiny colors and feathers might be in stark contradiction to your army's name. Of course, that might be your point, but I'm not sure.

Just look at medieval heraldry if you want an idea. Unicorns, Lions, Dragons, Wyverns, Gryphons, Eagles, arms holding different weapons. Personally I like the idea of a Phoenix, can even have a Valkyrie or Vendetta specially painted up with flames and a Phoenix's head on the nose if you are good enough at modeling as a transport for the command squad.

As for the type of world is could be a feudal or knight world, matching the aesthetic. You could also make it a mining or agri world which is simply technologically backwards. You could make it a fortress world with anachronistic castles dotting the landscape with heavy bolters on their towers and basilisk emplacement built into the walls. You could also make it a paradise world, like medieval times for 40k, it has technology, they simply put on a show of looking like a backwards planet for tourists.

Well assuming this is going to have some Pretorian theme, I would say have a background against Orks or the Bugs (Tyranids) and have a sort of Zulu/300 Spartans standoff which they won and have them been made note able within the ranks of the Imperium, this could also be an origin story that you could explore for your guard

Also if you like armoured spearheads, have a tank squadron nicknamed "Godslayer" referring to a tank squadron which felled a Warhound titan or a Tyranid Bio-titan...

Also don't be afraid of the Ad-mech and involving them in your fluff after all I'm sure if you keep tanks in good condition I'm sure you will earn or gain trust from them

What are you going to use as a HQ for your army? a good warlord will have a good backstory as to why the men and women follow him/her, maybe it could felling a Chaos Lord or maybe it was his/her tactics that help your guard survive a Necron uprising

Where are they now? are they currently fighting a war of attrition against the Tau Empire? or are they Fighting the war from within and laying what appears to be an eternal siege against a Hive World full of traitors and renegades?

Just small ideas for you to explore and hopefully help you flesh out your force

Also if your not afraid of 3rd party and other company minis I would recommend Spartan Games Dystopian Legions stuff, particularly the Prussian and Britannia stuff to enhance a theme for your guard

They aren't that bad. I mean they aren't good, but they are better than other units. If you have an empty FA slot you could fit them in and they could make a nice counter-charge unit.

Maybe give each officer there own personal heradrly? maybe even a basic one for sergeants or command squads

if there knightly theyl have there own history and symbolism and strong sense of showing there lineage.

officers being drawn from noble houses, ancestral lords and such, each vieing to earn more honour and prestige than there rivals.

honor but strong sense of competition, intrigue and complex family lines and loyalties, pacts and alliances.

Well then, if you are making it a memorial world, you should probably use a lot of death imagery in your army.

I mean, more than the IoM already uses. Like, not just skulls, but skulls and scythes, man. Grim Reaper looking things painted on the sides of tanks as an army badge would rock. The spade emblem from a pack of playing cards could work, too, since the Ace of Spades is regarded as the "death" card in fortune telling.
