Considering how perilous and generally grimdark the 41st millennium is, with the likelihood of a violent, painful death being pretty much a given, any chance that you could add a position in the catering corp as an option?

No.
No Space Marine wields as much power and authority as an Inquisitor, regardless of a given Space Marine's Chapter or rank.

He does if he's Grand Master of the Dark Angels.

Not even close. Under certain circumstances or with certain allies in the right place at the right time, a CM might be able to sort of match an Inquisitor... but that's basically expending all his political capital on one move, rather than having it be part-and-parcel of the job.

Azrael commands the entire Dark Angels Legion, and on his command could have a buttload of Unforgiven dropping upon somebody that seriously pissed him off and give him a very bad day. Or just kill him, which is the Dark Angels MO. Warp accidents are very common after all.

And... so? That in no way, shape or form puts Azrael on par with an Inquisitor. It provides Azrael with an as-yet-untested means of deploying a large number of Space Marines on a single target... maybe.
I say "untested" because Azrael has not, so far, tried to do this against a high-profile target, of the sort that would cause some/all of the supposedly-subordinate units to pause and think "Wait... do we really want to back this play? Is the Old Man off his rocker?"
Sure, Azrael could disappear a single Inquisitor he doesn't like. Big whoop. Mainly because, if it was later found out that Azrael did this, and if the disappeared Inq was a big enough deal (rather than some virtually-namless mook), then Azrael gets vanished. Probably by his own people before the Punitive Crusade arrives.
Having the ability to call up a bunch of Space Marines to do your dirty work is nowhere near the same thing as having the authority to order the destruction of an entire world (or several worlds), or the destruction of an entire Chapter of Space Marines, when you have evidence in hand to issue such orders.

And IA, especially early IA books, are horribly unreliable, filled with flaws, and generally suffer from godawful writing that bears little resemblance to the other fluff.
Didn't the early IA books bring up something absolutely mind bogggingly stupid like pauldrons shooting micromissiles or something to deflect incoming fire?

Ehm... if it's in an IA book, just as with a Codex, that's the info we get. Whether it's good, bad, or indifferent is... irrelevant, really. That's what GW has told us is going on.
I mean, I don't like Murder McMurderWolf from Planet Murderall... but he's a thing in the SW Codex, so he's a thing in the setting.
I don't like the Wolf-pulled hover-chariot, either... but, well, there it is.

It's not a case of not liking it. It's a case of it being flat out wrong and contradicting numerous other sources, often made directly by GW and not one of its umbrella minions. Plus then there's other stupid gak, like virtually every time IA opens its mouth about the stats for a vehicle and reveals the author is a complete idiot who knows nothing about... anything really. Like the armor on a Leman Russ being worse then modern MBT's.

There's no such thing as "wrong" with the fluff from GW. It's all biased, it's all from unreliable narrators. It's all "passed down" to us through a chain of fictional reporters to the GW staff to us.
Like the armor on a Leman Russ being worse then modern MBT's
And it might be, did you ever think about that? Maybe such is the technological degradation of the post-Heresy galaxy that their weapons technology has backslid to WW2 levels, and the other races of the galaxy just aren't as powerful as we fear they might be. Maybe that shuriken rifle is plenty sharp, but not actually all that good at really killing people. Maybe a pulserifle requires such a lightweight munition that, in most cases, all the target suffers is moderate bruising. Ork weapons tend to explode when the trigger is squeeze and, if it doesn't, the fact that they're firing wads of whatever comes to hand means that most of the time, you're getting peppered by grox dung, cigar butts and bits of paper.
As to the Inquisition itself, if we want to draw into more-recent publications from the GW umbrella:
Dark Heresy wrote:As a completely autonomous Imperial organisation beyond the power of the Adeptus Terra, the Inquisition is immensely powerful. As the Inquisition's duties involve the scrutiny and policing of the other organisations of the Imperium, the Inquisition itself is answerable to no higher power except the Emperor. No one, except the Emperor himself, is beyond the scrutiny of the Inquisition. This power is officially known as the Inquisitorial Remit or Inquisitorial Mandate

Except the very size of the gun would require better, especially when he have far superior feats then what would be capable with WWII armor. Also, the unreliable narrator part of GW fluff is probably dead. I've looked everywhere for the quote but it seems to have vanished from every single GW site, making it debatable if it is true anymore at all. Not to mention it would contradict the very reason of the Black Library or selling books at all.
And arguing that weapons aren't as effective as the math states they are is frankly utter fething stupidity. Something that fires a .75 caliber round or accelerates matter to a state that it becomes plasma is going to take somebody's head clean off, along with the majority of their shoulders. The problem is that GW's codex and campaign writers are blithering idiots who can't be arsed to research anything despite it being literal clicks away. The only people who tend to have their heads screwed on semi-straight are the novelists in the Black Library, although half the time they still can't even pick up a Codex to make sure their facts are straight (Gods of Mars especially bringing this issue up).
Plus, the idea that everything exists in-universe doesn't even function when many of the books we read would be burned in-universe or simply not read or exist given the target audience being a slack-jawed drooling moron incapable of thinking of anything besides burning and maiming.
As to the Inquisition itself, if we want to draw into more-recent publications from the GW umbrella:
Dark Heresy wrote:As a completely autonomous Imperial organisation beyond the power of the Adeptus Terra, the Inquisition is immensely powerful. Which only works if they have the force to seize authority. An Inquisitor with just a couple squads of Stormtroopers to his name is going to end up vanishing if he interferes too much with military operations. Plus then there's the opposing quotes from C: SM putting them above reproach from anyone. It's simply who's bluffing and who has the force to back their name up.

Everyone who dies in 40k gets their soul torn apart, to linger on in the Warp as nothing but an eternal vestige of a sensation of hellish agony. Dreadnought isn't even a close second to that. Shoot, even being tortured in an ACTUAL hell dimension would be better than that. You MIGHT escape a pocket dimension, but unless you're bestest buddies with Lorgar, you're not coming back from the hell that is death in 40k.
