the other side is a normal bookcase (so you turn it around and start eating your players)

That bookcase? A mimic. That treasure chest? Also a mimic. The carpet? A cloaker. The stalactites? Piercers. The stalagmites? Ropers. The doors? Oh, you don't want to know. Basically, something has evolved to fit every "imitate a fixture" ecological niche in a dungeon environment.
