2 units spring to mind for me.

My Centurion Devastator Squad TL Las And ML - Do decent damage output and are a big distraction as my opponents usually overestimate them or underestimate them.

Legion Of the Damned Squad - DS them near to an important vehicle all tooled up with melta. Pop the vehicle and then act as a big back field magnet for opponents to concentrate on. With 3++ they can usually stick around for a couple of turns and draw a lot of fire usually destined for other units. Quite effective.

On my previous army, warbikers. That with the KFF was soaking up so much firepower ofr the rest of my army, it was incredible!

After that, Ravenwing Blacknight. Those guy were doing all the heavy lifting, even without the shroud combo.

Now, with the Tau, I haven't play enought yet to really pick one. I'm sure the Riptide will be game decisive from time to time

Warbiker squads are brutal. They are fast enough to get into assault, well armoured enough to resist a squad of marines shooting at them, and have enough dakka to actually hurt stuff.

My Leman Russ tanks. These babies have bought me victory many a time.

Another mention has to go to my two SPG's, my Thunderer and my Deimos pattern Destroyer. In particular the former ate and entire sanctuaried 9 man Paladin plus [GK equivalent of a chapter master] in a single hit whilst the latter destroyed a Razorback, the honour guard that popped out of it and reduced the primarch whom was with them down to two wounds.

Free from GW's tyranny and the hobby is looking better for it

Chaos Terminator Squad and Lord with +1 Initiative and FNP. Annoying enough that it has to be dealt with and durable enough it's friggin hard to deal with. Great wrench to throw into enemy plans.

Warp Spiders. These things will wreck anything that isn't a Daemon Prince or AV13, and are mobile enough to stay out of enemy fire. They almost always make their points back in my games.

Either attracts huge amounts of firepower, leaving the rest of my army intact or wrecks a good chunk of opponent's army.

Boyz Mobz. Its amazing how often my opponent does one of two things. Either ignores my Boyz mobz completely and then gets a nasty surprise when he gets hit with 100+ CC attacks. Or gets ridiculously scared of my giant blobs of infantry that he focus fires them down completely and forgets that while he was doing that my Warbikers are now in his lines and eating up his expensive HS units.

If I find that I’m relying on one unit so much it feels like a lynchpin, I rotate it out to give other units a chance.

Sternguard are one unit that just routinely gains the MVP of the game for me when fielded.

With my Orks, my warbiker mob with Zhadsnark and painboy. They are tough, fast and pack a mean punch. Between skilled rider and feel no pain, they are very resilient.
I've also gotten good mileage out of lone deffkoptas, especially in maelstrom missions.

For space marines, I vary my lists too much and I've only played them twice since the new codex dropped. I fielded Lysander both times and was not disappointed. He's even more boss now with his fnp warlord trait.

Agreed. Dominions make us still good. Although, Repressors keep them alive longer.

Harlequin Skyweavers. Never fail to haywire the bejeezus out of something pricey. Six of them managed to down a knight and a land raider in a single game once.

For orks: Gretchin. 100% always Gretchin. Their crowning moment of glory was a 10 man squad rolling spectacularly and causing 5 wounds to a TH/SS termie squad, and wiping out all five. Grot blastas to my dice might as well be D weaponry.

For my IG -
Veterans. They hold the frakking line, they slaughter heavy/elite infantry and I love plasma.
They're such great multipurpose units: Light AT support, great AI support, objective taker and they take orders.

For my Necrons -
Deceiver C'Tan. Up to 3 units getting to redeploy at the end of the deployment phase? EEEEEEE That's basically a free teleport for my teleportation heavy army xD
Oh plus I love the fire he soaks away from the rest of my army and the other toys he brings.

Vanished Completely

I am quite fond of Sniper Drones, they might not be the heaviest of hitters, but their accuracy makes up for it.
Always try to find a spot for a 'sniper broadside,' many people overlook the Strength 8 precision shot till it takes out a flag bearer, Warlord or other important Model hiding at the back of the Unit.

8th made it so I can no longer sway Tau onto the side of Chaos, but they will eventually turn aside from their idea of the Greater Good to embrace the Greatest of pleasures.

For all of my armies:

Tyranids: Hive tyrant because withoutthem I couldn't win.

Necrons: Praetorians and my concllave of the burning one.

Skitarii: Sicarians, both infiltrators and Ruststalkers. Infiltrators wreck just about anything that's not a vehicle in CC while Ruststalkers wreck any vehicle in a single round of combat.

CSM: either Ahriman or a Chaos lord depending on how I run my army.

You don't have to be happy when you lose, just don't make winning the condition of your happiness.

the d6. Everything else in IG is either bad or weaker then what other armies got with less synergy. But sometimes a large number of 6s followed by 6s followed by 1s followed by failed cover can squeez out a draw or minor victory. Or when a draigo and tigurius with their libby budy scater of in to the warp along side centurions.
