In general I buy 2 player starters for one of two reasons:
1. I'm going in on a game with somebody.
2. I like the game and want to use it to demo.
Otherwise I just buy the rulebook to see how the rules are and then maybe buy a one player starter (like the WM/H Battlegroup DZC Skirmish boxes).
Buying a 2 player starter outside of those conditions is bizarre to me.

Every single game I've played except for AOS, including decades of RPGs and board games, I was the one responsible for learning the rules and teaching them before everyone else could become bored and decide to watch TV instead. Thanks to FFG, My failure rate has gone waaayyy up recently.
I can't imagine the frustration of having to rely exclusively on club hookups for game.

Exact same situation, man, barring rpg nights with Savage Worlds. I don't even have a club to play at in the first place. For 20 years I have been buying into games knowing full well I have to do 100% of the work, from buying to painting, to play any game I find and like.
Mostly a couple of long-time buddies, but I am hoping to get my wife into gaming with some fantasy skirmish, like Song of Blades and Heroes or Shieldbreaker.
If I want to play something like Dropzone Commander, or Kings of War, I will have to paint both forces.

Several people have mentioned it, but a good beginner's buy for X-Wing is two starter sets. That way you have a decent set of ships, and dice, movement templates and damage decks for both players.
You're also very close to a "full" 100-point force - 1-2 more ships for each side will give you a lot of playstyle choices. I'd go for individual ships rather than a third starter set - you get different options (like pilots) in the X-Wing and TIE boosters.
