For me it is undoubtedly the drop pod. So much that I twerked my list from a full drop pod to an "hybrid" list, with half drop pos and half rhino/razo. I still think it looks goods, but what a stupid model to glue and especially to paint !
When GW released it, I was so happy ! I wanted a full drop pod force. What a naive I was
What for you ?
Oh, and the chimera is close second, but not for the same reasons: it lacks a detailed and sculpted interior. It got me surprised and very disapointed.

Assembly may be the Exorcist. I know it's old, I know it's full of giant chunks of metal, but I've put together some pretty obnoxious metal chunks in my time and the Exorcist's organ is far towards the obnoxious end. Also some of the metal panels come warped and have to be bent back into shape without deforming the iconography.

First whats so annoying about the pod since its all plastic and will create excellent bonds with the right glue? But my most hated one is probably the metal Thunderfire cannon, why couldnt it have been plastic

Metal avatar of khaine, I don't know if it is just a degraded old mold but I have had 3 of them from different auctions and they never stay together and the joints bulge outward on both sides when they are meant to be flat. The shoulder pads on the body part make it hard to file the joints flat too. Also hard to pin because it is metal.

There are quite a few models that rub me the wrong way in some way or another, including the new model for kharn. the pose, the oversized chains with weights instead of hooks and those tassets feel wrong.

But they're all individual models. GW flyers on the other hand is an entire line of models that all look bad. The design rarely makes any sense even for a fantasy setting. But more than that, they all look like they should be bigger and were shrunk, except not uniformly. Other models may not suit my taste, but their flyers look distinctively like toys.

I can't help but see this, especially with the space marine flyers.

The razorwing is fine. The hemlock still looks kinda goofy depending on the angle. The neck needs to a bit longer.
The valkyrie looks great but that dates back since before flyers were a thing so I'm not counting that.

Stormsurge ankles, Tau Firewarrior antennae, and the Y'vahrah wings piss me off a lot.

Ankles make it hard to pose the thing well, the antennae fall off all the time, and the wings are so frail I could sunder it with a single word.

I hated painting the Ghostkeel. It's a subtle but hard model to paint because of all the little nooks and crannies. If I hadn't made sub assemblies it would have been near impossible. Drones are boring me and my Tidewall's novelty has worn off on the last piece and its starting to feel like a slog.

Edit

The only flyers in game I like are the Valkyrie and the Corvus because both look like plausible vtol craft and are. I like the FW barracuda since it also looks like an actual fighter in dimensions.

Anything metal that needs assembly unless it's like one arm. Next would have to be treads one any vehicle, they are just so haphazard to put together properly. and third would be spiky chaos bits or ork deff dreads with all the sharp pieces.

Fitting the interior into the drop pod. I had to leave mine out because it wouldn't fit together with it in, after I had gone through all the trouble to paint the harnesses and such.

I'll add the old broadsides. Those metal guns would never stay attached on the back unless you welded them in place (and would often tip the model over if you didn't position them right).

I don't know about other folks, but putting together Imperial Land Speeders is no fun either.

It never ends well

I really enjoy the modeling aspect of the hobby, so very few models are ones I hate to assemble. Gun to my head? Eldar (including Harlie and DE) bikers, specifically their arms. I will even go so far as to only have one hand on the handlebars, and do a bits swap to have the other hand wielding a weapon of some variety, just so I don't have to do the fiddly dance of plastic-glue-then-adjust-before-it-dries that always winds up smearing the model.

Painting? I just hate painting in general. Like, all of it. I really hate trying to paint challenging colors, like black, white, yellow, or red. (I try to stick to blues, greens, greys, browns, and purples wherever possible.)

Welcome to the Freakshow!

To put together...
The old Marines with metal las cannon.
You always either end up with the power cables not quite meeting the backpack or if it did the left arm was too short...

That or the original half metal commander farsight. Large chunks of metal on suits with tiny ankles is asking for trouble GW.

Same goes for the metal railguns on the old broadsides

The old metal Bloodthirster. That thing fell apart every chance it got.

“Because we couldn’t be trusted. The Emperor needed a weapon that would never obey its own desires before those of the Imperium. He needed a weapon that would never bite the hand that feeds. The World Eaters were not that weapon. We’ve all drawn blades purely for the sake of shedding blood, and we’ve all felt the exultation of winning a war that never even needed to happen. We are not the tame, reliable pets that the Emperor wanted. The Wolves obey, when we would not. The Wolves can be trusted, when we never could. They have a discipline we lack, because their passions are not aflame with the Butcher’s Nails buzzing in the back of their skulls.
The Wolves will always come to heel when called. In that regard, it is a mystery why they name themselves wolves. They are tame, collared by the Emperor, obeying his every whim. But a wolf doesn’t behave that way. Only a dog does.
That is why we are the Eaters of Worlds, and the War Hounds no longer."
– Eighth Captain, Khârn
