Older miniatures had them listed in the catalogues, but GW don't do that anymore.
If you watch/listen to GW's podcasts they sometimes mention who did what.

GW has stopped doing that almost entirely. They don't even list authors of books or codices for the games now. Probably to avoid backlash. Sculptors used to get higlighted, mentioned in white dwarf, and had a lot of articles back in the 90's interviewing them, showing their processes, etc.
Having said that, being CAD work now, it's also possible a miniature could be done by numerous sculptors, but they still don't feel the need to recognize or advertise their sculptors' works, which is unfortunate.

It's also more than likely that in a digital CAD environment, that miniature creation is now a collaborative process, and so all models are simply done by a design team. Sure, one or more artists might play a slightly bigger role here and there, but oftentimes it'll be collaborative (a concept/sketch artist might create the initial drawing, which is handed to a digital artist who handles the CAD sculpt, who hands it to someone who might specialize in cutting the sprue, or preparing for print/casting, etc.)
Especially given that they more than likely have a CAD library that they create and add assets for (like Space Marines; you think making new Lieutenants is difficult? lol), so it's much harder to give sole credit.

Yeah. Realistically, they could probably knock out the CAD files for a new Lieutenant model in a day. Working out the sprue obviously takes longer, but it's not like they're redesigning the backpack or basic armor every time.

I would like to know more about who does what at GW, because the new models are a mess.

Have a watch/listen to the VoxCast Podcast then, specifically episodes 2 (Darren Latham), 4 (Matt Holland), 6 (Maxime Pastourel), 11 (Mark Bedford) & 19 (Dave Thomas) (or any of the Jes Goodwin ones).

I'm not sure I believe that episode is truthful. You can't convince me the same designer who made the new Banshees, sisters and the new chaos marines is also responsible for the trash that is the new shrike and tor models in addition to the bouncy castle auto cannon marines. It cannot be the same mind.

You're clearly not familiar with the work of Gary Morley, then... In the days of metal minis, he was responsible for both some of the best and the worst minis in GW's catalogue. Likewise, compare Juan Diaz's awkwardly-posed, buck-toothed Striking Scorpions to... well, just about everything else he's ever sculpted. Every sculptor has good days and bad days.
Besides which, the new Shrike and the Bouncy Marines aren't even that bad... at least on a technical level. They're great sculpts, just silly concepts, which isn't the fault of the scuptor. And being silly concepts is only a problem if you don't like that aspect of GW's current direction.

And a lot of it is personal preference too. I actually love the Juan Diaz Striking Scorpions.

You also have to consider that sometimes a designer might have all the time in the world to sculpt something and other times the pressure of business and such might mean they have to do a rush job on something.
Or perhaps their design is fantastic, but its impractical to impossible to part and make a viable mould for. Thus the great idea gets chopped and changed up for the practicalities of manufacture.

Or a designer that has an amazing concept/idea, but the art director wants to tweak it or take it in a different direction.

Sure it is. That hair is utterly ridiculous... but it's meant to be. It's the Ravenguard Wolf Sleigh.
That doesn't mean it's bad, unless you don't like that sort of silliness in your game.
