Plus OP, Hellsing is only ten volumes long, so (if you are like me) and want to read it first, it won't take too long.
*looks at Bleach, One Piece and Naruto which are like 50+ now*

I enjoy some anime, but I can't stand what I call "Anime Face". You know what I'm talking about; That thing that looks like what all the kids do in the forums these days. This thing: ^_^
I guess maybe I'm just an old curmudgeon, but I like more "serious" anime. Having that been said, here are a few I really enjoyed:
Blood Plus
Cowboy Bebop
Full Metal Alchemist (in spite of the goofy faces)
Hellsing
That one with the guy who blew gak up by taking pictures. Forget the name.
oh, and BIG OHHHHHHHH!!!!!! (it's so much better when you actually see it in the proper order. Actually makes sense)

And in all fairness, Hellsing is supposed to be pretty campy. It's just so rediculous that it has to be awesome.

And I know, I saw a AMV where he dies, Seras bites him, and she becomes a full on Vamp. Twas Awesome.
Though Honestly, when I first heard about Hellsing, it was like "You know what? I need a blood drenched, Gore obsessive, dark Vampire Fantasy/Book/Movie/WHATEVER in order to have any respect of Vampires after Twilight. This seems about right."

I'm going to recommend two animes:
Great Teacher Onizuka: Essentially ex-bike ganger becomes a high school teacher and is put in charge of a class of super-smart deliquents, hilarity ensues
Black Heaven (Hard Rock Save the Space!) former heavy metal legend turned insurance broker is hunted down by people from space who use his music to power a giant space superweapon they need to defeat their enemy. story of a karoshi wanting to bust out again, with aliens, and heavy metal music!
