Eldar speak Eldarin with each other, so do the Tau. GW even give the actual Tau and Eldar words. In this case English is really representative. But I doubt that they speak their native languages when talking to humans.
Servants of Chaos are the same humans, but under control of the Dark Gods, so they simply can speak human language. And Daemons are incredibly smart creatures which are able to speak any language they want.
As for the Orks, I think Orks such as Ghazghkull or Gorgutz can speak Gothic. Because humans understand them.
As far as I understand it, Path of the Warrior was written in english.
What I mean is, english is used to represent these languages when we are meant to understand them in the fluff. I know they have their own in-universe languages, but when youre playing Fire Warrior on your PS2, youre gonna hear them speaking english. Its all representative.

I imagine that the Orks speak a multitude of different languages. Perhaps based on a genetic predisposition. There is some discussion in our own universe that word roots and sounds may be inherent in us.
It doesn't appear that Ork language developes very much past a certain level especially since they aren't complicated socially and technological wonders are created spontaneously and not through development.
Just an idea.

Nazdreg can speak Gothic, I'm sure a few other Warbosses and Nobs can (particularly Bad Moons and Blood Axes), but it's definitely a rarity. I imagine most Orks would consider the endeavour decidedly 'un-Orky'.

As far as I know, Orks did negotiate with the Imperium (infamous Blood Axes) and Chaos Forces (with Alpha Legion in DoW) so it's quite possible to have business with them. And yes, speaking Gothic is required (Low Gothic is enough - don't make an Ork pray to the Emperor  )

Orks genetically remember things from the previous generation. Meks can make guns and kans because they kinda already knew how they day they crawled out of the mud. IIRC Orks have been trading with races as long as humans can remember. They traded with squats and eldar and I'm sure they have with kroot at some point (being stuck in the same place for so long).
And several good points were made above.
Orks as a whole kinda make their own reality. If they want you to hear them yell "Imma gun krump yaskull, ummie!!!" you will say to yourself, "Did that thing just say something about trumpets?" before being cleaved in half.
Orks are sexless but are full of testoserone, making them lean more towards male tendancies.
And once again... READ XENOLOGY!!! It will answer all questions regarding the anatomy and such of the major races of 40k including some you've never heard of.

Actually, if you read the painboy section of the codex, you'l notice a quote saying something like:"the painboy at least knows where to stick the squirty thing below the vein that goes to the green wriggly bit on an ork boy!" so yeah I think there all male, that and the fact they all speak in a bloke's voice and they reproduce by spore's that come of their bodies when they die! XD

What he means is when you are fighting an Orc you aren't simply fighting you are also having a passionate love making session (In the orc way) - when you fight Orcs you are actually making love to them.

So yeah... I think the 'how do they learn it question?' is valid.

Orks have an inherited memory. Its how the pass on all sorts of cultural knowledge. I suspect it has something to do with the warp and genetics combined. With enough of them they could just have a mek create a universal translator if they wanted to taunt the enemy (which they do).

I think its been explained, most of the Orks we see have developed near humans so its understandable that they speak the language of the common foe - oks that developed with no prior contact too humanity speak their own language (if they have one)
the whole thing about Boyz etc - this game was written back in the old days and then they couldn't be bother making new names for all the units
its a lot easier too call a unit Boys then some alien name that no one can relate too - (and a lot more fun too)

I always thought Orks spoke their own language and we the audience see it as English (similar to how Imperials talk in English despite using Gothic). Figured higher-level Orks may catch onto some Gothic phrases here and there.
There are multiple stories with Orks that have humans mentioning their crude guttural language, etc.

Orks do have their own language but its very primitive and involves a lot of hitting there is a better definitional in the deathwatch book

It is amazing how the concept of orks have changed over the years. I would say in a way that their current incarnation doesn't match their speech (which was apparently bestowed on them during the 80's, one of the design team when playing them used a rough London accent to mimic how he imagined them talking and it stuck), and I think the disparity looks a little bit out of place.
In fact the couple of books which were written about Ork 'kulture' have now been effectively reduced to two words which encapsulate the depth orks have nowadays in the background: "mushroom" and "krump"
Can you tell I'm more of a fan of the older material?

Who says that the Old Ones didn't speak Gothic as well? They were the ones who created the Orks, and I think the Eldar too. So the Old Ones could have had influence on Mankind's languages as well, helping to mold Gothic into an almost universal secondary language for most races.
