Probably due to the rarity of such units. I can't think of any outside of Rough Riders and Bloodcrushers of Khorne. The described unit is the significant part of the model, most often the rider. The mounts is just a means of transport.

What about thunderwolves? I think they should have their own profile, so they can dish out their own attacks specifically Thunders' and 'Crushers.

Forgot about them. Again, when mounted, they're more of a transport than a separate entity in 40k.

I think the idea is that rather than have a seperate profile for the mount, being on the mount gives the rider bonuses to represent the presence of the mount.
So, a bloodletter on a crusher gets higher str and a 3+ save and a daemonette on a steed of slaanesh moves faster and gets another attack etc.

It's to keep it streamlined. Rather than having to designate between mount & rider when taking wounds & having random mounts roaming around the battlefield, it's all combined into one. One model, one statline, lot easier.

The only.cavalry units actually used in 40k are Bloodcrushers or anything else on Juggernaut, or TW. Think how good they are now and top it with an actual TW/JN profile.

I don't know how cavalry work in 40k as I've never used them/looked them up... but I would imagine it should be represented within the statline? I mean, bikes (which are sort of like a mount) are since they provide an additional toughness that is discounted when resolving instant death. So there we have a bonus from a mount that is distinct from the rider as the rider will still go down (if he is a Marine) to s8+ hits.

Their bonuses are applied to the unit riding them and that's good enough. Thunderwolf Cavalry get rending and an extra pip in toughness, strength, and wounds if I'm not mistaken, plus fleet and cavalry movement? I think that's plenty good as is. No need to complicate things.

I modeled a bunch of Catachan Rough Riders riding on Velociraptors, you better believe that I'm in full support of them having a stat line and being able to claw the enemy that just got power-lanced =p

I know of the JP army that you speak of, and it inspired me too. I have so many of the toys that I'm trying to integrate as many of them as I can, T-rex sentinel included XD When the Riders are done, you'll be the first to know Brother =p

I prefer the 40K way myself, they tend to boost the troops riding them in nice ways, and saves you having to track it all in combat.
I have forgotten to attack with my mounts more times than I would like to admit in Fantasy over the years.
Considering that in both systems, you remove the model as soon as rider dies anyway, having a combined profile in 40K is the better option.

I feel it would help in situations where either mount or rider is very different to the other, or gives the other unfair benefits. Like with TW cav, the marine has a power weapon, and gains his mount's S for it, or he is hit by a meltagun, but he survives due to his friend he is sitting on.

Probably because they aren't common, and the fact that 40k is getting dumbed down and GW thinks it would be too complicated. I had a GW staff member tell me one time that he wasn't going to let me use a data sheet in the store if I didn't remove a rifle I created because "it was too complicated." The part he didn't add was that it was only too complicated for someone who had the IQ of the model being used to represent it. The guy was usually pretty cool other than that though...
