So I have this old Mech that I would like to convert into a Knight of some sort
It currently stands about 6.5 - 7" tall, so it's too small to be a "counts as" Warhound...
For an Apoc game this weekend I am proposing we use the following:
KNIGHT : 400 pts
WS 3
BS 4
S 10
I 2
A 1
ARMOR
FRONT 13
SIDE 13
REAR 11
UNIT: 1 Knight Paladin
TYPE: Super-heavy walker
Hull Points: 6
VOID SHIELDS: 1
WEAPONS AND EQUIPMENT:
2 arm-mounted weapons:
- Volcano Cannon (both guns at same target)
Shoulder mounted rocket launchers (2), like the MLR pods on the Vakyrie
Left shoulder - searchlight, (and this one is just for fun!) Right shoulder - smoke launchers with 24" range
- Twin-linked Autocannon (just above the Pilot's compartment)
I'd love to hear any comments or suggestions as to rules, "Datasheet", or direction for the conversion.

While I don't know the exact size of a knight, this sounds reasonable.
To elaborate on what to change, you'd have to scale it down slightly, namely the weaponry.
Volcano cannons are meant for Reaver class and above, so they'll have to go. The scale of weaponry you should be looking at are twin-linked versions of large guns found on normal size tanks. For example, instead of a twin-linked lascannon, your Knight could have a more powerful Quad Lascannon or Laser Destroyer from FW. These would be arm weapons. Your shoulder weapons would be normal vehicle sized weapons; things like missile launchers, autocannons, and normal lascannons.
Armour is reaosnable, no complaints. Hull points are fine too.
The void shield is reasonable, though (and others feel free to correct me on Knight fluff) I recall some knights having a large shield on one arm instead of weapon. This shield could be used to provide something in the order of a straight up 5++ in the front arc only (but no void shield to compensate), or could have 3 void shields in the front arc only.
Something to think about. With all that, somewhere in the ballpark of 300-400pts would be reasonable.

Yeah, volcano cannons are way too big. That's a Shadowsword or Reaver gun, the gun alone would almost be bigger than your entire model. Considering the size I'd say they'd be much more appropriate as battlecannons (LRBT gun). Valkyrie frag missiles for the shoulder launchers would be fine. With those changes 400 points is about right, you're doing superheavy-level damage but still short of a Shadowsword/Baneblade.

I labelled some things in the pic
I feel that it should also have some sort of anti-personnel weaponry like H Stubbers or H Bolters, either under the MLRPs or on either side of the pilot's compartment.

Knights never meant to be an all-rounders - different patterns were designed for different roles, so if your knight have a lot of high-strength blast weapons and no machineguns, it's totally OK.
If you plan to use him as SH walker, it should have some nerfs for stomp attacks and explosion rwdius/damage, as it's not as big as a titan and powered from huge battery, rather than unstable plasma core reactor. If it's not a SH, it should have some rules, that allow him to shoot ordnance weapon without penalties.

Having blast and Machine guns still wouldn't make it an all rounder. The actual Knight Paladin is armed with a Battle Cannon and 2 Heavy Bolters in Epic because it's designed to engage both troops and light vehicles. The important thing to remember about Knights is that they're designed so that an entire Household can take on an entire army as they're often the only military force on their world.
