Well, you still have ld 10...
I dont say to shoot it to death with s8 weapons because orkz miss a lot, and so, you are using a unreliable tactic...
Lets say you are using a regular unit of 3 twin-linked rokkit launchas. With BS 2, you will hit one and reroll another, making 1 or 2 wounds at all...
Doom have a 3+ inv save, so your chances still being 50%... Ok, maybe its not so unreliable.
Another good trick is the aforementioned: get out of here.
When your oponent field Doom, he will field it with DS in mid of your forces. Well, you probably have lots of trucks, and so, you can just run on the more important targets.
If you dont have a truck, you will have a Battlewagon, wich will have Bonecrusha... So, just ram him, and deliver 1d6 s10 hits, all Insta-killing (this "tactic" have 12" range).
All this suggestions are assuming your Warboss and Nobs are busy delivering hits i another place.
Hey, the slugga rain is one of the most reliable tactics with orkz, my boyz killed a Keeper of Secrets one time, as a Hive Tyrant in another, and a dreadnought (hitting back armor), all with their noize sluggas...

It only gets me as a disruption tactic. A Doom of Malantai can really muck up a gun line if thrown down via mycetic spore. Even if it doesn't cripple your shooting ability it buys vital time by getting shot at while the rest of the Tyranid horde gets closer. (Not, do not group 5 different IG units with a neat 8-12" gap for the Doom to drop in).

Shoota is for shot, Chopa is for chop, slugga is a Shoota with a bit les dakka...

You are right in that he doesn't have synapse and is infact subject to instictive behavior. He is also inherently fearless though.

I gotta say, the one time I used the Doom he was pretty cheese. I was playing 1,000 points against my DEldar friend, who had a squad of warriors and an Archon with something like eight men in his special retinue. Doom drops down and by his turn only 1 warrior was left along with the Archon. My shooting destroyed a Ravager. At this point he was pretty upset and I finally learned what a Huskblade does :(
