Chaplain Grimaldus. He not only has a fantastic model, he is also a phenomenal badass in Helsreach.
For Chaos, it had to be Kharn the Betrayer. Funny that I ended up playing a Tzeentch-oriented list. Also the Metal Daemon Prince helped to stoke the fires.

Be'lakor made me start a Hordes of Chaos Army.

For 40K Bjorn the Fell Handed made me want to start a Space Wolves army when I was a kid.

Ah, the Leman Russ. Arguably the most iconic of Warhammer tanks. I've always liked them as well, though not enough to start a Guard army.

The Necron army in the 4th ed. minibook which showcased all the armies is what caused me to originally start them. Flashforward to now and it was a mix of the CCB and the Wraiths that got me to restart.

Originally I wanted to start Tyranids and that was because of the hormagaunts

Personally I ended up going with tau because of their battlesuits. I absolutely love the 80's era mecha feel. So much infact that im worried with the transition to finecast of model designs heading towards a sleeker more organic look like the shadowsun suit etc.

Most of the armies I've started playing were due to 1or 2 models. I've always found one thing I've really enjoyed then filled in the rest.

For me, just the simple Guardsman. There isn't much to him. He's just a soldier, straight up. That's something unique to the guard. Everyone else has their warriors and fighters, but the Guardsman is just a soldier, soldiering on. He's little and there's a lot of them.

Bjorn the Fell Handed. Hands down my favorite character in the game, and one of the best models upgrade kits.

Eldar guardians are just militia. Sometimes they barely have any training at all. They're just a soldier as well, though a soldier with better technology.

No, they aren't soldiers. You said it yourself: they're militia. There are a lot of differences between soldiers and militia, and foremost among those is mindset.

A lot of people started Tau because of the Battlesuit/Gundam connection.

I personally started a Catachan army because I was such a fan of 80s action movies. Predator/Commando/Rambo/etc.

Terminator Chaplain got me to play Space Marines... but more than that Typhus got me interested in Death Guard which lead to my obsession with Chaos.

I think Typhus is probably my favorite model in 40k but close on his heels is that Chaplain...

Fair enough, though many of them would have had experience with at least one of the warrior paths, so while they're a militia, they're a militia that largely has the training of soldiers.

Still not the mindset though. The mindset of warriors, definitely. But not soldiers.
