And BTW, back up your Tide with a Void Shield Generator so bolters just plink off them without any harm.

I sure wish I could find the rules for that *cough*

It's in the Stronghold Assault book.

Here is an example why book invis is stupid, and Space Wolves not having chapter tactics is stupid, and missions that favor deathstars are stupid. This deathstar is an example of a list that mainly exists to destroy the fun of opponents that play it.

You can't kill it as Orks. Don't even try. Kill everything else. I've won plenty of games against variations of this deathstar with my Ork MSU lists. A culexus in a pod would give a shooty Ork list a chance to do damage to the deathstar, but do not try to out deatstar it with things like Stompas or Bikestars. Just ignore it and hope the mission allows you to win on points.

You probably aren't going to be able to build an Ork dread army that can beat it. Maybe a Culexus arriving just perfectly might do it.

It is my opinion the best solution to deathstars like this is better Army Comp, Tourney FAQs, and Missions. If you talk to your TO, and make your voice heard that Rock-Paper-40K isn't your style, a few minor changes and restriction can do a world of difference for the competitiveness and fun of your events.

MSU and know the rules for Multi-charging very well. Make it so he can only hit 1-2 units at once.

7th edition 40k is a lot like BDSM these days. Only play with people you know and develop a safe word for when things get too intense. And It doesn't hurt to be a sadist or masochist as well.

Lower their init?

By surrounding it so that it can't flee from combat without passing through an unfriendly model. I'm not talking about throwing a handful of Sisters at it, I'm talking 45-odd models with rerollable 5++ saves and Fearless.

Knowing and applying the multicharge rules well will certainly help, but bear in mind Wolfstars can split into several units when the time comes.

Hit & Run allows you to ignore the models you were locked in combat with for the purposes of moving (provided that you can finish 1" away). Wolfstars are big units themselves and enveloping the whole thing would be really tricky.
