Genestealer Cults predate my experience with 40k. With the new Deathwatch Overkill box set, are there any sets of rules for Genestealer Cults that require minimal modification for play in 7th edition?

There are new formations and dataslates floating around on the web for that box. My guess is that we will soon have 2 new armies to spend our money on instead of having to dig for really old rules: D

The Datasheets for the Genestealer Cults will be published in an upcoming White Dwarf IIRC. I'm guessing that Deathwatch will be in the next issue and the cult in the one after that. No modifications needed.

On top of that I remember some event only "datasheet" from a while back 6th or 7th edition but is was just a way to make hhybrid cultist

Insect-Infested Nurgle Chaos Lord

Until official rules come out, the Genestealers fit Imperial Guard pretty well.
The Magus is a Primaris Psyker, the Primus is a Commissar, the cultists are generic troopers, and the Abberations are....Bullgryns? Maybe. And obviously the stealers themselves are stealers.
The Deathwatch marines are harder, cuz there's no single squad in the entire game that has all of those options. Until official rules come out, they're essentially custom models in random Marine squads (the Terminator, in fact, doesn't even have a legal loadout, since no terminator can take a melta gun atm, let alone a special weapon AND a heavy weapon).
However I would use the Deathwatch Marines as conversions for special characters. The White Scar biker is basically Kor'Sarro Khan on Moondrakken, the Ravenguard is Shrike, and Cassius is....well Cassius.

My best guess would be that after the box set we would get a small codex release for both. Perhaps even including generic deathwatch units instead of named ones.

No, you can field Cassius, the two assault marines, the terminator, the librarian and the biker as formations of one model, and the other five as a separate squad. You can field the Kill Team Cassius formation of all eleven models if you want, but there's no requirement to do so.

Cassius would need a bit of conversion as he has a Bolt Pistolninstead of a Combi-flamer. However the White Scar and Raven Guard are matches for their respective characters. I'm just sad I already scrath-built a Shrike
