Hmm... I want to live long, kick ass in combat, have my own personal rockband, be able to enjoy every moment (pain/pleasure), I'd be both a super charismatic and insanely confident commander.
I,d be Lucius the Eternal! 
Seriously, is there any other choice?

The Colonel of an Airlanding regiment (Airbourne and gliders, A Bridge Too Far anyone?). A handlebar moustache, crimson beret and lots of witty soldiers with Mark 13 lasguns (fold-away stock, higher rate of fire than normal, lack stopping power - Sten guns basically). We are cocky but courageous.

As a Slaaneshi daemon I think you would like that...
I'd personally be an Ordo Xeno Inquisitor. You can get away with anything (almost) in the Imperium, have a cadre of highly skilled operatives, near limitless wealth, the best technology around, and sometimes I might actually do my job and kill aliens/bust hedonistic nobles.
Plus, as Ordo Xeno there is less of a chance of soul-damnation that comes with Malleus/Hereticus.
Oh, and Eldar ladies...Sanctioned Xenos anyone?

I would love to be an Space Marine chaplain because I'll have super cool black armour and skull helmet and Crozius Arcanum as my weapon  and what spreads the word of the Emperor better than a blunt trauma to the head xDD
or be an librarian cause I could just have super cool psychic powers
or be one of the Legionaries of Legion of the Damned show up when the SM needs you and have awesome black armour with flames and bones on them
or just be a loyal SM of Ultramarines chapter

I would want to be myself and lead an army of Tau! Although I no longer like Tau as an army....tabletop wise. I still like their fluff and whatnot.
Plus I would want to get a Crisis suit custom fit to my liking. I would have a XV88 type Suit with 4 rail guns on it. Either that or a XV9 Hazard Suit but instead of the Burst Cannons I would
have them replaced with Twin linked Burst Cannons and a stealth generator with four shield drones.
Fantasy I would lead a tribe of Lizardmen into battle.
