I'm shocked that no one has suggested Glenn Cook's Black Company books. Someone published one RPG book for it but it didn't do the books justice (IMHO).

It was meant as a joke, but so much of the combat in Culture novels is pretty much over before it started. The Idiran war was presumably a little less one-sided, but that's a rare exception.
