So, Im applying to college at the en of this month and I have to write a statement involving my interests and who I am.
The representative who told me how to asked "Well, what are your hobbies" I told him Painting models, playing board games and RPGS. he said "Cool, use that"
So im stuck thinking about how 40k and pathfinder will help me get into college.
Any ideas?

Point out you were an active member of a gaming club for x years and have aided others in adopting the hobby while crafting your own skills.
The whole truth is not necessarily important so long as you can spin the truth to your benefit. Being sociable and active with others is seen as a positive trait. Being able to cooperate with a group in a community for a long period of time is a more positive trait.

In terms of painting you want to talk about practicing new and more challenging methods to improve your skills as well as providing you with a creative outlet. In terms of gaming, I second what was said earlier that you actively participate in (and hopefully help run) a club that teaches new players how to play the complicated game while making the experience fun at the same time.
Think more about what you're trying to demonstrate you know, instead of what you're saying you know. You want to show that you constantly try to improve your current abilities by learning and you want to show your ability to teach others a challenging topic.
If you listed your intended major or degree level that might be more helpful as what exactly you want to show the reader may vary. E.g. my most recent experience in school applications was for a math phd so I really had to hit hard on the "I keep on learning new techniques" and "I teach well" qualities desired in applicants.

The Degree aspect is part of another essay.
Im thinking of using it to say im good and remembering lots of info, sociable and capable of getting a group moving. HE said it is also important to show you have a life outside of school, so they know you can handle school itself, as the representitive said

Take the big hardback version of the 40k rulebook and slap it down on the desk.
After the guy gets back up from getting knocked down by the shockwave, explain that you not only had to make sense of it, but you memorized it, to play a game, for fun.
Textbooks are a joke compared to that
On a serious note, painting and modelling require a good amount of physical dexterity and patience, as well as creativity and attention to detail.
Playing these games requires a good amount of forethought, planning, strategy, knowledge of probability and odds, a good deal of math done on the fly in your head, and keeping track of a wide variety of rules and units to make sure you stay ahead of your opponent.
It's not hard to make this look good on an application if you word it right.

"Attention to detail"
"Complex problem solver"
"Ability to think outside the box"
"Lateral thinking to add with just the general forward and back thought processes"
"Time Management"
"Maximizing resources within a set number/goal"
"Build interpersonal Relationship"
"Conflict Resolution"
To name a few. Mind you have to go in personal detail on your self bio. Don't copy these phrases and leave it hanging
Also helps keep you from getting Early Onset Alzheimer's.

No idea what course your taking but as to what "benefits" you get from playing 40K look to what I imputed and align your chain of thoughts on each. Write a phrase down and under it write examples you remember that can relate to it.

I actually used gaming to get a job previously. I used the problem solving, outside the box thinking and the fact that I know several systems well enough not to have to check the rulebooks and still get it correct. it's even better if you can show them the pathfinder/40k rulebook and say 'this is one of several games I play."

I actually used this to net me a job with Rolls-Royce as an electrician.
I took along a model I had won a painting competition with, I explained about my hobby how it encouraged team work, tactical thinking and decision making, the ability to work alone, evaluate resources etc.....
I then explained about the model itself, how I prided myself on my attention to detail, was not easily flustered, patient etc.....
It's very easy to pick out skills from our hobby which apply to working and educational scenarios.

Just take some of the aspects of the hobby that you enjoy and insert some business speak, or use course specific language;
- complex problem solving
- information recall
- applying abstract concepts to practical situations
- resolving disputes amicably
- attention to detail
- dedication and commitment
- being a member of/running a club for X time shows commitment
- gaming as a way of interacting with people from different backgrounds etc.
- how to work towards goals, assign tasks, manage units strengths and weaknesses
- combining a time intensive hobby with studies shows the ability to time manage and strike an equitable work/life balance

Joined the Military for Authentic Experience

I had a friend use the fact that he organised and ran an RPG get him a job managing a bunch of other people in a major multinational for a temp project. Emphasised the organisational and social managing side of things, as well as the role as the facilitator of other people's ideas.
I've never used wargaming on my CV myself though.

I've used my experience as a server admin/clan leader on a few occasions. its really about how you word it and how you play it (and probably who is doing the interview). Look at the job you want and emphasize the applicability of the hobby. It took me a few tries to really get the wording right and some strong examples for the applicability. It helps not to just say you have a skill in an interview but to say how you got it and give an example of how you used it.
