They're all pretty cool. It's hard to pick just one.
My interests have shifted over the years, but right now I'd have to go with Ultramarines. They may be as vanilla as they come, but I think that's just a part of their appeal. Their flexibility is probably what pulled me into collecting them.
From a gaming and modelling standpoint, with Ultramarines, I can buy and use just about any model without it feeling odd or out of the question for them to be using it in a battle. Another bonus is that they've been painted by many people over the years so there's countless resources out there for guides, inspiration, references, etc.
I've only been collecting them for about a year now, but my collection grew pretty quickly. Along the way I'd sometimes think about what it'd be like to start up another chapter and work around their theme ( ie Raven Guard with Scouts and Assault Marines ) but then I just stop and think how I'd be restricting myself to the theme and play style of that chapter. I think I made a great choice with this chapter. To most people, they're the most boring chapter, but to me they're the most exciting, because I can bring a little bit of everything to the collection.

Ultramarines take the cake as the backbone of the Space Marine line. And there's a Company for anyone depending on their likes. I prefer 3rd, with a good dose of Xeno fighting from Captain Ardias. Some of a more anti-daemon persuasion could swing for 4th, and the rigid militaristic have their 2nd. The good thing about being the poster boys is that everything is fleshed out.
Though, Raven Guard and Crimson Fists are very good reads too.

Black Templars
They embody what it is to be an Astartes. They continue the great crusade, always moving forward and never giving up. Besides that, the Emperor chooses THEM to send his visions through. They answer to no one other than the Emperor and their High Marshal. They boast perhaps the largest fleet in the current age of the Imperium and they are one of the largest chapters. Thousands of them...You can't compete against the combined might of the Black Templars.

The Sons of Orar! Beakie-wearing-Tyranid-killing decedent chapter of the Ultramarines with enough fluff for good existence in the setting but, enough to make your own? Give them to me!
Though the Scythes of the Emperor, Lamentors, Imperial Fists, and Sable Swords are up there. If I hadn't of gone with SoO, I'd probably of done SotE or Sable Swords. If neither of those, Death Strike.
Still, honorable mention... Salamanders got me into W40k.

Either way, the Warmaster Horus was the one who ordered the Space Wolves to destroy the thousand sons. It was not their choice, they believed that the Emperor himself had told them to.
Also, Space Wolves, all the way. They're one of the few Legiones Astartes that are left. I mean, think about it. They hate injustice and try to right some of the wrongs in the IoM, plus, they are the same in 40k as they are in 30k, just minus a Primarch and minus a 13th Great Company.

Oh, you heretic.
What I love about the Blood Angels is the torn dual nature. They SHOULD have turned to Khorne and mindless rage, but they CHOOSE to fight it off, and remain true to the Imperium. (at least until they go insane, and eat up a pack of Space Wolves, or whoever else presents themselves). Very "Dark Knight" tragic hero stuff.
Plus, they paint and appreciate art in their spare time. So, basically 40th Millennium hobbyists.

While I agreed wholeheartedly 1K sons are now CSM, I'd vote for the Blood Ravens but they didn't add them as an option

I was originally drawn to 40K by the Legion of the Damned. A little research showed it'd be difficult to field them solo, so I started looking at their Fire Hawks origin for a standard chapter to field with them. A chance meeting in the used 40K section at a local book store guided me towards the Salamanders, and I've been hooked since.

I disagree. Blackface has much more to its appearance than just the skin color. And I enjoy the skin color, it's an interesting piece of fluff and is different from all the other armies out there

The Minotaurs might be vile, but they're SO bloody efficient and brutal you can't help but like them. Plus their Chapter Master's fluff is just too cool. Is he a Perpetual? Is he merely a symbol with someone taking over each time he dies? Is he plausibly somebody that's just that hard to kill? Cool stuff.
They'd probably be in the three way tie between Carcharodons (who are probably just as vile as you can get) Iron Hands (their Council is a smart thing), and then Minotaurs.
There's just tons of Chapters that it's really hard to choose.

The SoO are my army of choice and my favorite but, only because I can make my own fluff for them and they kill Nids. At the end of the day, they're just cool ultramarines with beakies. So if you had to have context or fluff, then that would put the Lamenters as my favorite. They're a bunch of good guys who get royally bent out of shape, and yet still try to do what is right. They'res not many of them. Which is the same deal as Scythes of the Emperor, except they have more fluff and better storylines.
Eh, Sable Swords due to the color scheme but, really the only true appeal they have to me is they took over where the Astral Knights left off. Salamanders got me into Warhammer 40k, on this game called "Kill Team," which was on Xbox live for 360. I shouldn't have even of really mentioned the fists in my first post but, they only reason I like them is their paint color. So really... Lamenters win out.
I agree, it's hard to choose just one chapter.
